Here's the scenario:

- me and this guy have been good good good friends for about 2-3 years now - he's had this "thing" for me for a while now and i've never really noticed
- we've finally come to this point that we feel mutual about each other and we're falling for one another
- from what his actions/gestures tell me (and others), he really cares and adores me
- he respects me, my independence and space. I'm a really independent-minded person and i'm really focused into school right now and so is he
- i think this is his first time being "serious" or getting somewhere with a girl - he's a shy guy

We can go 2 or 3 days without any communication - talking to each other, no little calls, texts, messages ,etc... i understand we're both the same way in terms of our priorities and we're both very independent but...the fact that we can't even talk a little each day scares me and is making me think he might not be interested? Is it cuz he doesn't know what to do? or he's too busy?

More likely too shy - especially if you "didn't notice" he had a thing for you. You could try calling him. You could try asking him about having more frequent conversations.
If he's young and a "first timer" he may not know what to do and won't admit it.
If you want him then make it clear and work toward getting what you need. You're not helpless in the relationship.

Communication is the key. Sounds like your feelings are there. Take a walk or some place neutral. Open up a dialog. The shy act does not fit w/ your description of yourself.

I would usually say that if he is not calling then he is not in to you but in your case it seems that you and everyone around you knows that this guy does care for you. I would talk to him about it and see what he says I bet he is just busy but if you say how you feel chances are he will call or text more even to just say hello

Well, i mean you said it, he is a shy guy.....this is probably his first time getting somewhere with a girl. So i wouldnt jump to say that he is not interested.......give him some time, maybe this is new to him........maybe you should call him instead of waiting on him to call, be assertive huh.

Of course he's interested. You don't need to talk to each other every day to prove that. It's how he acts when he is around you that counts.

If you are dying to know what he's thinking best bet is to go up to him face to face and ask him straight forward. That's is the best way I can think of.

Perhaps he is thinking you are not interested and is waiting for you to take the giant leap of faith. Also he might not be that interested. Sorry.

from what you said i think thats coz he thinks he's doing the right thing, if you want him to call you everyday just talk to him and he'll understand.. believe me..!!
