I don't want to use alcohol (brandy). Would it be okay to substitute mint extract to make a 'grasshopper tiramisu' or would thee mint conflict with the mascarpone cheese. Or maybe you have some ideas for a different substitute. Thanks.

Mint is good... but I've seen tirrmisu recipes with Amaretto which is almond flavored so Almond extract is just another alternative.

Based upon your question description... you seem to have a good palate. I say trust your instincts.

I dont think that would taste very good personally. Maybe try something like a cherry flavouring, almond extract, something that goes good with coffee. A softer alcohol that goes great with Tiramisu is Baileys Irish Cream...

You can always dip the ladyfingers in room temperature espresso instead! The style of making it varies, some people use rum or brandy, some espresso, other people use both.

No dont use mint....that would not taste good with the cakes at all. I recommend maybe , especially almond, even hazelnut!
