I'll tell you how I eat on a normal day. I'm 5'8", 123lbs. I am a vegetarian, though not vegan or organic food eater. this was yesterday:
Breakfast: 1 whole wheat english muffin, low fat Peanut butter, low sugar preservers, coffee with non-fat milk
snack1: banana
lunch: veggie salad, whole wheat tortilla with low fat cheese and orange low sugar jam.
snack 2: pear
dinner: 1 whole wheat tortilla, with boca meat substitute, corn, and low fat cheese inside w/ taco sauce. black beans on the side
snack3: low fat, no sugar added ice cream bar
I drink a lot of water and herbal tea. you could easily add chicken to the quesadilla or to the tacos. I make pasta (whol wheat) with sauce and cheese a lot, and other veggie dishes. the only organic things I buy on purpose are organic milk and free range eggs.

Increase your intake of healthy foods: fruts and veggies, whole grains, lean meats and fish, etc. Stay away from: fried stuff, saturated fats, refined sugars, highly processed foods, most fast food, etc. Generally, if it looks like it's bad for you, it probably is! It's not that hard to eat a healthy diet if you give it a little effort.
