Today is Ash Wednesday, the begining of lent. Are we NOT suppose to eat meat today?

Yes.

We are supposed to fast and abstain from meat today.

The Catholic Church and many other Christians Churches follow the Biblical practice of Jesus Christ and the Jews in setting aside days where the entire Church fasts and prays as one in a attitude of constant renewal.

Traditionally, yes, you're to abstain from meat today, especially if you're a Roman Catholic.

However, as a Christian, I believe that how and if you observe Lent is an individual choice. For example, I haven't eaten meat yet today, but I might before the day is out.

Lent is not specifically prescribed in the Bible, but I don't think that means that a person can't observe it. Lenten practices are inspired by Biblical events and saying, such as Jesus' 40-day fast in the desert before he began his ministry.

Some will say, "Shouldn't you do that all year round?" Yes, and especially so during this season. The Catholic Way of Christ submerges our lives in seeking holiness, so that we engage in actions both symbolic and real as we seek deeper communion with Jesus.

Therefore, when you feel the pangs of hunger, or the privations caused by your sacrifices, think of the Lord, think of the poor (whom the Lord calls His own, per Isaiah), and set your mind on the higher things knowing that this life is only a temporary and insubstantial shadow to the eternal life that awaits us in Heaven.

We mustn´t eat meat today. Today is a day of fast and abstinence.
Every Friday is a day of abstinence. Ash Wednseday too.

true. No meat today or any Friday until after Easter.

At least in my dioceses, only one meal is supposed to be eaten today. (for healthy adults 18-60)

It isn't a matter of what you're supposed to do - it's a matter of where the Holy Spirit leads you. Lenten rules are made by man for religion. Ask your church clergy, then, what practices they use for Lent. Whatever those practices are, let them not compromise your love for God or for those around you.
