should freeze fine, as long as you put it in the proper container. least amt. of air possible, remember to date it so you know how long it's been frozen. eat it the same day you thaw it and remember that the longer you wait to use it, the more likely it will be that you lose some flavor. peppers may go to mush, depending on how crisp (or not crisp) they were after the initial cooking.

Yes you can freeze the left overs even if it was refrigerated for a few days. We make our own sausage and always have more than enough for a couple meals you can freeze in a sealed container for up to 2 months without losing flavor.

Sausage and Peppers is a great dish to freeze. I do this all the time, it freezes really well and it's great to have on hand for company. I advise wrapping it in plastic wrap first and then tin foil. Just remember to remove the plastic wrap before popping it in the oven to reheat. Enjoy.

It will freeze just fine, and peppers seem to survive freezing better than many vegetables... the only thing that would concern me is that you made them "the other night".

How long have they been sitting around? Even refrigerated, you might want to reconsider long-term storage... I worry about your health!

Best wishes!
