I have marinaded some salmon fillets in soy and lemon and I have chargrilled some asparagus and peppers. I want to add the sliced veg to some noodles but what can I add to give the noodles some juices or a slight sauce? I don't want to use olive oil. Any ideas please??

use whats left from the marinade that way you won't have to many flavors going on at once.

You can cook the noodles in broth or you can make a peanut sauce using peanut butter and some broth or water to thin it out. Use about 1/4 cup of peanut butter in a small sauce pan. Add broth water or even coconut milk to thin out the peanut butter on a low flame. Stir until smooth and add a little red pepper and salt to your taste. Toss the noodles in the sauce and serve. I think the peanut sauce might work well with what you've already prepared. It will keep with the Asian theme.

If you want to compliment the salmon and the veggies, I would recommend using a very light lemon butter sauce. Just blend a little garlic, butter and straight juice from one lemon, and you should be good. This will also really bring out the grille-taste of the veggies.

I would use some of the liquid from the Salmon, i.e., the lemon and soy and possibly stretch it out with a little chicken stock. If you simmer it for a few minutes to thicken and add a touch of butter for the final touch it should be perfect.

I know you don't want to use olive oil but you might want to consider a flavored one. Maybe Garlic or Sundried tomato?
Or you can always use orange juice or chicken/veg stock.

how about a cream sauce with heavy cream, white wine, butter and some spices or herbs like parsley.

simple soy sauce will do teh trick for you, or if you want it a little tangier, add lea and perrins
