I had dessert at The Uptown Grill in LaSalle,IL. I am looking for a recipe for a pineapple up side-down pie that I had there.

EXTRA MOIST PINEAPPLE UPSIDE - DOWN
CAKE

20 oz. can sliced pineapple in juice
2 (4 serving size) pkg. Jello brand vanilla flavor instant pudding and pie filling (or substitute a 4 serving size pkg. Jello brand vanilla pudding for the instant pudding mix in topping only)
10 maraschino cherry halves
1/2 c. firmly packed brown sugar
2 layer size pkg. yellow cake mix (or use pudding included cake mix and 3/4 cup water)
4 eggs
1 c. water (or use pudding included cake mix and 3/4 cup water)
1/4 c. oil

Drain pineapple, reserving juice. Arrange slices in 13 x 9 inch pan; place cherry half in center of each. Combine 1 package pudding mix and pineapple juice; pour over pineapple and sprinkle with brown sugar. Combine cake mix, remaining pudding mix, eggs, water and oil in large mixer bowl. Blend; then beat at medium speed of electric mixer for 4 minutes. Pour into pan. Bake at 350 degrees for 55 to 60 minutes or until cake tester inserted in center comes out clean and cake begins to pull away from sides of pan. Do not under bake. Cool in pan 5 minutes. Invert onto platter and let stand 1 minute; then remove pan. Serve warm.
In high altitude areas, use large eggs, add 1/4 cup all purpose flour and increase water to 1 1/2 cups (with pudding included cake mix, use 1 1/4 c. water).

i have never heard of a pie, my grandmother made a pineapple up side down cake.. Here is the recipe for that.

INGREDIENTS
3/4 cup butter
3/4 cup packed dark brown sugar
3/4 cup unsweetened pineapple juice
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup white sugar
3 eggs
1/2 teaspoon vanilla extract
1 fresh pineapple - peeled, cored and cut into rings
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
Melt the butter. Brush a little bit of the butter on the inside of a 9 inch cake pan.
Mix 5 tablespoons of the butter with the dark brown sugar and 1/4 cup of the pineapple juice. Place this mixture in the bottom of the cake pan. Arrange the pineapple rings on the brown sugar mixture in a decorative pattern (be creative). Set pan aside.
Stir together the flour, salt, white sugar, and baking powder.
Separate the eggs. Beat the whites until stiff but not dry.
Beat two of the egg yolks until lemony yellow. Stir in the remaining 1/2 cup pineapple juice, vanilla, and remaining melted butter. Add this mixture to the flour mixture. Gently fold in the egg whites. Pour batter over the top of the brown sugar and pineapple rings.
Bake at 400 degrees F (205 degrees C) for 30 minutes. Let cake cool in pan for 10 minutes then cover pan tightly with a serving dish and invert so that the pineapple side is up.

Pour into 9x13 inch pan.Bake at 350 for 40 minutes. For icing combine all elements; beat untill fluffy.

Try this one:

PINEAPPLE UPSIDE-DOWN PIE

1 (1 lb. 4-1/2 oz.) can pineapple tidbits
Water
3 tablespoons cornstarch
3/4 cup brown sugar, firmly packed, divided use
2 tablespoons lemon juice
6 tablespoons butter
1/2 cup pecan halves
Pastry for 2 crust pie

Drain pineapple. Add water to pineapple syrup to make 1 1/4 cup.

Combine cornstarch and 1/4 cup brown sugar in saucepan. Add lemon juice and pineapple syrup mixture; cook, stirring constantly, until mixture is thick and clear.

Remove from heat and add 2 tablespoons butter, stirring until it melts. Add pineapple.

While preheating oven to 425 Degrees F. place remaining 4 tablespoons butter in bottom of 9-inch pie pan; place in oven until butter is melted.

Sprinkle with remaining 1/2 cup brown sugar and 1 tablespoon water. Arrange pecan halves, rounded side down, around bottom and sides of pie pan. Carefully line pan with pastry. Spoon in pineapple mixture.

Adjust top crust, flute edges; cut vents. Place pie on square of foil in oven to catch drippings.

Bake in hot oven (425 Degrees F.) 25 minutes. Turn out, upside down, on serving plate immediately. Cool on rack before cutting.

Serve with ice cream or whipped cream, if desired.
