You can use them until they go rotten. I have chickens and here is how to tell if an egg is any good. Take said egg and put it in a glass of water. A fresh, good egg will sink to the bottom without hesitation. If it slowly drops down or floats, throw it out. Nevertheless, I always crack the eggs into a bowl first and then add to the dish.

I have used eggs that are a month past the sell by date. A lot of times I have a hard time FINDING the "sell by date"

Eggs are interesting, they are good for months after they are laid, the question comes in when they've been stored in a warehouse and shipped across the country for who knows how long. For the temporary question, definitely break it into a bowl first and see if it looks or smells funny. for the long run, I'd reccommend buying your eggs from local small farms, then you'll know exactly how long ago they were laid, and they taste a billion times better anyway :)

It depends on how properly the eggs have been stored, and what you're going to be using them for. If it's a reciepe that gets fully cooked to over 160 degrees, it should be ok to used past date eggs, as the heat will kill salmonella. But if you need them partially cooked/raw, I would buy fresh.

as long as they are kept at the correct temperature about 5 years plus....an egg place in ohio got caught selling eggs from 5 years...the only problem with the gov was that they sold them as fresh and 5 years arent fresh but they are still good...however i dont know the correct temp so i dont eat them past 2 months on sell by date

You shouldn't go by the Sell By date. I've had rotten eggs mixed in with the fresh. "Pc Guy" gave the right method to determine if the egg is not rotten.

fill a glass full of water and drop an egg in and if it goes to the bottom and stays then its good,if it touches the bottom but kinda floats a little then its going bad but you can still use it,if itfloats and does not touch the bottom at all then dont eat it unless you want to be sick!

use a separate container, crack open the egg, if it is spoiled throw away. If it is not spoiled you may use it to eat. Never crack open an expired egg into a recipe you are making or into any other food. always into a separate container until you are sure.

the best way to find out if an egg is still good is to shake it. if you hear guggle sound it's gone bad, otherwise it's still alright.
