Smothered Pork Chops
Ingredients
Any cut of Pork Chops
Half a white or yellow onion
One Red Pepper
Minced garlic
1 can cream soup (I like cream or mushroom)
1 can gravy
3-4 cups of water
Seasoning (salt, pepper, sage, garlic powder)
Olive Oil
Add about 3 tablespoons of olive oil to a deep pot (about 4 inches)
Add minced garlic, sliced onions & red peppers & sautee
Season pork chops
Take out the garlic, onions & peppers & place to the side in a bowl
Brown each side of the pork chops (1-2 minutes per side, med flame)
Add all the browned chops to the pot (probably will have to put them on top of one another)
Place the garlic mixture on top of chops
In a measuring cup or bowl mix the water, cream soup & gravy.
Pour this mixture on top of the chops.
Cover pot & bring to a boil.
Once it's boiled, turn flame down low & let it simmer for about 2-3 hours. The longer it simmers the more tender the meat will be.
Serve over rice or with mashed potatoes along with a veggie if you like & enjoy.

How about some quick fajitas. I do these all of the times. I also vary up the meats, I've used chicken, ground beef, pork chops, shrimp. Here is the recipe I use and it is so quick and easy and yummy.
Quick Fajitas
1/4 C. soy sauce
1/4 C. Pineapple Juice (where I live, you can only get pineapple juice in a half gallon container, and since I would never use this much I always get a small container of chunked pineapple and drain the juice out of it. It is exactly a 1/4 cup and you have pineapple chunks for dessert!)
1 T. taco or fajita seasoning
1 lb. ground beef, chicken breast, pork chops, or shrimp (if using chicken, I like to use the boneless, skinless kind and cut it into strips. Same goes for the pork chops, get the boneless kind and cut into strips. If I am using shrimp I will usually just get the frozen kind that has already been cooked, peeled, and deveined. That way all you have to do is thaw them.)
2 T. Vegetable oil
1 onion, thinly sliced
1 green bell pepper, thinly sliced
6-8 large flour tortillas
(Also, if you do not want to buy the produce fresh, there is a seasoning packet of veggies in the frozen food section that include onion, green bell pepper, and red bell pepper with seasoning. This also works great and is a little more cost effective.)
Directions:
Cobine soy sauce, pineapple juice, and taco seasoning in a small bowl; mix well and set aside. Next, prepare your meat. I like to use a large pot for this. If you are using ground beef, simply cook, drain, and return to pan. (you will not need the oil if you use ground beef.) If using chicken, pork chops, or shrimp; place oil in large pot and saute' your desired meat until the outside is brown. Next, add in onion and green pepper. (or frozen seasoning mix if you choose to use.) Saute' this along with the meat for antother five minutes. Then you add the pineapple juice mixture and cook for 5 minutes longer, stirring frequently. Spoon onto warm flour tortillas and enjoy. You may want to garnish with sour cream, salsa, or guacamole. Just whatever you like best.
Definitely try this! It is really good, cheap, and has a quick cooking time.

That's funny, when I first moved into my apartment that I'm living in now I was irked about the electric stove. I have learned to love it. The handles on your pots NEVER get hot like they would on a fire stove. The only thing you have to make sure is, when you are frying for any of the above recipes, that you MAKE SURE you turn the electric off. My "High" and "Off" are right next to each other on the dial and on more than one occasion my pot is bigger than the electric area on the bottom, and I can't see whether the stove is "red" or not. I have left a pot of hot frying oil on the stove, and it set on fire. Good thing my husband had the mind to put a pot over it to snuff out the fire that had started in the pot. And on that note, remember never to put water (even a drop) into hot oil. It will immediately (I kid you not) set on fire and will possibly splatter on your arm/face.This is something I never had to deal with until I used an electric stove. I hope these tips will help you someday! Great luck with cooking. I only have Israeli one pot recipes for you...don't know if you like Israeli food.

Try huevos Rancheros
Chop up some tomatoes, oniones, bell peppers, and maybe a jalapeno pepper if you like the spicy stuff. Season with salt and sautee on the ONE pan.
When the veggies are nice and soft like a salsa, with your spoon make two cratters in the middle of the salsa and crack an egg in the middle of each of them. Sprinkle the eggs with a dash of salt for flavor.
Cover the pot and the egg will cook with the steam. Once the egg is cooked, just place it on your plate and add some of the extra salsa on it.
I saw this lady make a more complicated version on PBS but I'm gonna make this simplified version for lunch for my husband and I in about 10 minutes.

Claypot chicken rice (Chinese Style)
3 chicken breast meat, chopped into small pieces
1/2 can of button mushrooms (slice half)
1 tb sesame oil
2 tb chinese wine
2 tb dark soya sauce
1 tb light soya sauce
Handful of lettuce, shredded into long strips
1 cup of rice & 1.5 cups of water *
1. Marinate chicken breast meat with the sesame oil, chinese wine and soya sauces. Put in fridge while preparing the rest of the ingredients.
2. Cook rice in pot with low-medium fire. Stir occasionally to prevent burn at the bottom of the pot. After 15-20 minutes**, open pot & add chicken meat. Then, add the mushrooms on top. Close the pot and allow the pot to finish cooking the rice, approximately another 5-10 minutes.
3. Open the pot & add 1 teaspoon of dark soya sauce. Stir up the rice & all the ingredients and serve immediately on a bed of shredded lettuce. (This recipe serves two)
* Different people have different measurements for cooking rice. For me, I've always used the proportion 1 cup of rice to not more than 1.5 cups of water. In this recipe, you can substiute half of the water with chicken stock for added flavour!
** My pot usually takes 20 minutes to finish cooking rice. Basically, add the chicken meat and mushrooms five minutes before the rice is done. For me, this would be 15 minutes after the rice starts cooking, but it might be different for you!

you can make swiss steak,(fry round steak until brown on both sides, add 1 big can of tomatos , 1 large onion. 2 green peppers, garlic, salt pepper and 1 tomato can of water, bring to boil simmer 1-2 hours until meat is tender)
potatos, stew(again brown the meat, add stew seasoning out of the foil pack, potatos chopped, oinon celery and carrot, boil then simmer 1-2 hrs)
,soup(broth w. any veggies and rice or noodles)
, eggs, just about anything that goes in a fry pan can go in the pot. oh ,and stir fry too.

Here's a good breakfast food----but it is kinda fattening.
Dice potatoes and put them in the pot. Squish a tube of bulk sausage into the pot. Scatter fry until done. Crack several eggs into the cooked sausage and potato mixture and scramble it all around until the eggs are done. It is great with Texas Pete and a little ketchup.

You might want to just try those meals in the freezer section of the grocery store. They come in brands like Stouffer's and they are all in one meals. Other than that, I don't know how you can manage to make one full meal in one pot. At least not without having to continue to rewash the pot in order to cook more items while setting what you already cooked to the side.

Chili
2 lb ground beef 4 tbs. water
1 tbs. oil 2 tsp. ea.: salt, sugar,
Worcestershire
1/2 tbs. Tabasco sauce sauce, ground cumin, oregano
1 lg onion chopped 1-1/2 tbs. chili powder
2 cans kidney beans 3 c canned tomatoes
Brown ground beef in oil. Add onion and cook until it turns clear. Add remaining ingredients except kidney beans and simmer 1 hour covered. Add kidney beans and cook 1 additional hour uncovered.

Beef Stew Favorite
2 lb stew meat, 1" cubes 1 lg onion, sliced
3 tbs. oil 1 can (1lb 12oz) tomatoes
1/2 c flour 1 clove garlic, minced
2 tsp. salt 1/3 c water
1/2 tsp. pepper 1 bay leaf
6 carrots, cut into 1" pieces 3 med. potatoes, peeled, cubed
Coat beef cubes with a mixture of flour, salt and pepper. Brown in hot oil in bottom of oven. While oven is still hot, pour water in and scrape brown bits from bottom. Place remaining ingredients into oven and cover. Simmer 1 to 2 hours or until meat is tender and potatoes are done.

1 lb ground beef 1 lg can baked beans (28 oz )
Cook beef until done, drain off fat (do not drain in a
open fire ) add beans, cook until beans are hot, serve with bread and a cold soda!

Now read carefully. I have hundreds of 0ne pot dishes, that are written for a Dutch Oven. A Dutch oven is a pot used to cook food with on the outdoors fire, but all you need to do is when the recipe sez dutch oven, just use your pot. These are simple, but wholesome recipes written for Boy Scouts.
I presume you have a oven on the electric stove. If you have a roll of aluminum foil, then you can make foil pouch meals, with no cleanup. You even eat out of the pouch. Are quick and easy. The secret is to make an air tight tent with a table spoon or two of water. It acts like a minature pressure cooker, and I have yet to see a Scout burn one.
If you want to try one, use a hamburger patty, thin sliced potatoes, a little salt and pepper, and seal. You can add to this sliced onions, bell peppers, sliced carrots, or what ever else you like. 20-30 minutes in the oven at 400 degrees. Remove, Make a hole in the foil, and eat!
