Try Fajitas as they are quick and easy and enjoyable. I usually serve mine with potato wedges or cous cous.

My favourite meal to cook when people visit is a casserole, as you can make it well in advance, put it in the oven for a few hours and then you have plenty of time to clear up, lay the table and get yourself looking gorgeous. Jamie Oliver has some great casserole recipes, I'm afraid it is too time-consuming for me to go and fetch them and write them out, sorry, but maybe you have a recipe book you could use. Serve with some warmed crusty bread and / or a bowl of potatoes. Yumm!

What kind of budget are you working with? My fav meal for entertaining is filet mignon, baked potato, broccoli and caesar salad. For 4 people I buy 2 8 oz steaks and have them cut in half.
Put potatoes in the micro or oven (400*)to bake, toss up the (bagged) caesar salad and put in fridge. Steaks will take 10 min for Med Rare. Use a heavy skillet over high heat and melt 4T butter (not margerine) or use olive oil. When hot, sear steaks on all sides quickly, using tongs to turn. Place skillet in 400* oven for exactly 7 minutes. Steam your brocoli. Remove steaks from skillet and allow to sit 5 minutes before plating.

To start with you can have an antipasto with olives, garlic bread and a nice cure italian ham (prosciuto) with some parmesan cheese. For main course get some fresh steaks from the butchers ( I love fillet or rib eye) with some crispy colourfull salad .......easy easy and take no time or preparation.......of course .........desserts from M&S and vuola' !!!!

Meat loaf, mashed potatoes, and corn
Good comfort food that is always a winner!
(as long as you don't put any funky stuff in your meat loaf!)
