For me, I weigh myself everyday. That way if I gain say 2 pounds I cut my calories back for a few days and maybe add an extra fitness class that week. I hope this works for you.

Unfortunately I think the only answer to this is maintain the exercise/eating regime you did to make you lose the weight in the first place.

keep doing what you did to lose it. make sure that it is not too hard to continue doing for a long time. For example many new diets allow one cheat day a week to shock your body and to give some relief. This helps you to keep the diet long term since you have a little respite a week.
