How about a nice mozzarella, tomato and basil salad for starter... some kind of pasta for the main (so many varieties to chose from and can be as simple or complicated as you want) and then a cake or fruit salad for desert? Good luck and enjoy!

Make something classic like a meatloaf, mashed or boiled parsley potatoes and fresh sliced tomatoes drizzled with olive oil and basil. Any meatloaf recipe will work well to shape into loaf shape, put into glass loaf pan and microwaved on 80% about 20 minutes or so, just so the inside temperature reads 160 for doneness. Lift out of the pan and in the serving platter slip back into the microwave. I mix tomato sauce and brown sugar to spoon over it and cook the last 5 minutes and create a glaze sauce. If you decide on mashed potatoes, add 1/2 tsp garlic powder with butter and milk. You can even arrange the mashed potatoes around the meatloaf in the serving plate as the glaze cooks on the last 5 minutes. What time is dinner? Can I come over? :)

As you just have an hour why don't you just do a main course and a dessert. For the main dish make the following, which is quick and easy to do

Sweet and sour chicken stir fry
2 tbsp oil
½ chicken breast, skin on and diced
sprinkle of cornflour
4 tsp sesame seed oil
½ broccoli head, cut into florets
½ onion, peeled and sliced
3 tbsp soy sauce
pinch of ground ginger
drizzle of honey

Method
1. Heat the oil in a non-stick frying pan. Coat the chicken pieces in cornflour, then pan-fry in the hot oil for 5-6 minutes, turning over half way, or until the chicken is browned and cooked through.
2. In a separate pan or wok, heat the sesame oil and add the broccoli with the onion. Stir-fry for a few minutes, to soften. Stir in the soy sauce, ginger and honey and stir-fry for 4-5 minutes. Add the chicken pieces to the pan and heat through, adding more soy sauce if necessary.
3. Serve.

and then as a dessert do this lovely crumble, which again is quick and easy
Apple crumble with custard

For the apple crumble
150g/5½oz unsalted butter
½ tsp ground ginger
1 Bramley apple, peeled, cored and finely chopped
2 tsp caster sugar
100g/3½oz plain flour
100g/3½oz brown sugar

For the custard
150ml/5fl oz whole milk
150ml/5fl oz double cream
1 vanilla pod, split lengthways and seeds scraped out
2 large free-range egg yolks
2 tbsp caster sugar

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. To make the apple crumble, put 50g/2oz of the butter into a small saucepan together with the ginger, apple and caster sugar and cook gently for 5 minutes until the apple has softened and broken down slightly. Pour into a small ovenproof dish.
3. Put the remaining butter, the flour and brown sugar into a food processor and blitz until it resembles fine breadcrumbs. Sprinkle the crumble mix onto the apple, place in the preheated oven and cook for 10 minutes.
4. To make the custard, put the milk, double cream and vanilla pod and seeds into a non-stick saucepan and heat until just boiling. Remove the vanilla pod and set aside.
5. Meanwhile, whisk together the egg yolks and caster sugar with an electric whisk until pale and fluffy. Pour the warm milk and cream mixture over the beaten eggs and sugar and whisk to combine. Pour the mixture into a clean saucepan and heat and whisk for a further 2 minutes or until the custard has thickened slightly. Remove from the heat and pour into a small jug.
6. To serve, pour the custard over the apple crumble.

For starters, make a cheese and fruit plate. You can buy those pre-cut cheese squares and get a mixed fruit plate from the local deli.

For main dish, nothing is quicker and easier than pork chops. I personally like Shake-n-Bake style. For the sides, serve green beans and stuffing, maybe some cranberry sauce.

For desert, a pie, cake, jello, pudding. Keep it simple. The desert could be something pre-made that all you have to do is either heat it up or just serve.

What a lovely idea!,

It obviously depends on what they like,.....mussells in garlic sauce for instance, taste wonderful and you can buy them already in the sauce to boil in the bag. These can be used for starters or main. Salmon or any kind of fish is wonderful baked in the oven with lemon juice & herbs wrapped in foil, very easy. Both can be served with salad or pasta. Ice cream is good for desert buy some hard merigne and break into pieces, make layers in a bowl of fruit, ice cream and merigne cover with sauce and add a flake !!

Good luck
