Pancakes are cakes made in a pan or cooked on a griddle rather than baked in an oven. The basic ingredients are flour and liquid - either water or milk. In many areas baking powder, shortening and eggs are used to make the cake rise and be fluffier.

In North America pancakes or griddle cakes are made with wheat flour, milk, baking powder, butter and eggs. In some areas other grains are added to the wheat - one of my favorites is buckwheat. In many countries in Europe, no raising agent is added and the cakes are much thinner. In China, only flour, water and sesame oil are used to make the pancakes, which are usually small and thin. They are traditionally served with duck as part of the main meal.

Unlike China, many countries treat pancakes as a breakfast food served with a sweet topping such as syrup, fruits, nuts or jam. They can also be rolled with almost anything inside - sausage is one of my favorite fillings.

All in all a fun and versatile food.

some pancakes are thick some are thin these are crapes

a good recipe is
4 oz (110 g) plain flour
pinch of salt
2 large eggs
7 fl oz (200 ml) milk mixed with 3 fl oz (75 ml) water
2 oz (50 g) butter

if you want these sweet AC 2/3 ozs sugar. if thicker add more flour. THIN ADD MORE MILK

THE idea of pancakes before lent was to use up all the bits and pieces of flour etc.

Pancake are cakes that are cooked in a pan. They consist mainly of butter flour sugar milk and eggs. They were used in the olden days to get rid of any sweet food that would not be allowed on lent.
