Hi there - I'm planning to make paella tonight but have a question for you. I need to know what the ratio rice/stock is. I'm using 'Bomba' rice variety - say 100 grams: how much stock should I use? I cook my paella in the oven. Pls help!

it would be very useful to actually establish the right rice/stock ratio - keeping in mind that paella is to be cooked in the oven... maybe a Spanish/Catalan chef could help??!

The trad way to do it is to pour enough stock into your paella pan to come up to the handle rivets. Then pour the rice in the shape of a cross into the pan. When the level of the rice cross is just peeking above the stock then you have the perfect ratio, no need to measure anything. This is the method I use and it works every time, no matter what the size of the pan.

BTW 100gs of rice is only going to give you a single ( maybe double ) serving, it is a very small amount of rice.

I usually eyeball everything - just put enough stock to completely cover the rice and just pop it in the oven.
