She sniffs some things (the side of a couch, etc.) then leaves her mouth open for a few seconds. It looks like some kind of "high" she gets when she smells certain things. Is this really a "high"?

This is known as flehmen. And your cat does this when it detects a familiar odor or certian odors. The cat actually has a scent gland in the far back of the roof of it's mouth called the Jacobson's organ. Your cat does this when it smells or tastes(by licking) and object. It will raise it's head and open it's mouth then inhale. It will then flick it's tounge over this gland depositing the odor that gets transmitted to the brain.

She probably smells her own smell or someone elses on the couch or whatever then opens her mouth to inhale the scent. A lot of cats do this, it's normal. Not a high. ;)

Our cats do the same thing sometimes and it is hilarious because they always look at me after they sniff something and have their mouth hanging wide open and it is hilarious!! So I think its normal I just dont know why they leave their mouth open for a minute like that...it is kind of strange....lol

They're smelling with their mouth. My cat usually does this funny face when he smells something with a strong smell.
Their mouth is as sensitive to odors as their nose. So they stay their a bit maybe to understand what it is.

It's called fleming(sp?), and cats use it to process scents if I'm not mistaken.
