she is going to school as normal and at lunch I am coming with a picnic and blanket. I want something cool and fun and easy

A Lunchable would make you a hero! But to be raised to the status of "Coolest Mom Ever!" A Happy Meal is the best "status-raiser" for the kid.

How about those food color pens to write with... have the kids decorate their crackers, cheese and apples.
Cut out the cheese (and or bread) with different cookie cutters.
Cake cooked in ice cream cones.
