As far as taste and ease of filleting. We are shore fishing, so please don't list the deep-sea ones.

It matters where you are fishing really..............

East Coast- If you are fishing off the shore of the east coast flounder , tautog, and striped bass(rockfish) are the best. Flounder is a flat fish so it is hard to clean. Tautog is a fat fish that is kin-dive small and easy to clean. Striper are a big fish that have a lot of meat on them and are easy to clean.

Gulf- The best fish to eat in the gulf are grouper and snapper. Snapper are small and hard to clean. Grouper can get to five feet and are easy to clean.

Striped Bass Scup or Poggies but the last two are very small one fish will produce about 1/4 lb both filets but they cook up quick watch for the little bones before filleting the bone rack pulls right out but some stay flounder can be caught from the surf or jetties blue fish but theu are a little oily yes salmon are good but check the local fishing laws, due to overfishing most of the east coast of the US salmon are off limits to anyone but commercial fisherman

I think not so much what, as when. If fishing different regions you`ll quickly discover which are the best fish to eat. But I discovered the best time to eat them is as quick as you can get them in the pan. We caught several Grunt in south Florida a number of years back on a fishing-camping excursion. Had the fire going right on the bank. Timing was pretty good, about the time I`d catch on, get it fileted, floured and in the grease, we`d catch another. They say the fresher the fish the better, well they don`t get fresher than that!!

Atlantic Salmon here in Canada can be caught from shore sometimes. Best fish I've ever tasted, raw or cooked-- it's excellent sushi sashimi!

Wash it for 10 min in fresh water, in a few changes of water and grill on a soaked wood plank if camping on the beach. Or grill, bake, broil, bbq or microwave each steak about 2-1/2 min at home, leave skin on. Doesn't smell much at all, skin will fall right off.

Pacific Salmon is nice, but gamier smell and taste.

All fish require a variety off foods to keep them in good health. You want to consider the nutritional requirements of that specific fish. If it is an algae grazer you need to feed more algae based foods. Would you eat the same thing every day? You can feed freshwater food as a treat or emergency if you ran out, but freshwater ingredients are not geared towards marine animals. If you have several different types of fish you can create your own mix that meets the needs of all your inhabitants.

The tastiest sea fish I've ever caught and eaten are Sea Bass. Fabulous fish and great fun from shore. Cod would be a close second though.

I do a lot of bottom fishing in the gulf out of Pensacola each year and catch my share of snapper and grouper but one of my favorites is Triggerfish!! Fillet them a dry coating of flour, salt and pepper and pan fry like crappie or blue gill-GREAT!!! Not that hard to fillet-I use an electric knife-about 1 minute per fish.

Depends on where you are and the time of year. I fish the Texas gulf coast. Speckled Trout, Redfish and Flounder are the big three down here.
