I took them to the vet about two weeks ago and neither vet had seen anything similar...She prescribed anitbiotics for the respiratory infection and thought that might clear it up (it didnt) , she also suggested trying a different type of bedding (i use carefresh and am going to try aspen). the growths are around the outer edge of the ear and dont seem bothersome, some spots are black but it looks crusty. I will take them back to the vet, but was hoping I could get some peace of mind before I do that. Could it be a fungus? Are there any websites with good diagnostic photos?

Personally, I have yet to see these mites in my rat colony.

Several sources that I looked up for you agree that you are indeed correct in your assumption that these are sarcoptic mites. Rare in rats but they can get them. I've been on 12+ rat-only forums for 11 years and only twice has someone mentioned their rat had these mites. Treatment is the same as with other ecto-parasites and I prefer to use Ivermectin

Ivermectin use for ecto-parasites:

The Sarcopic Mite websites have more info on ridding your ratty of these pests.

When you buy your next package of bedding, put it in the freezer for a couple of days. This will kill any parasites that are living in the bedding. Bedding can harber the bugs while it sits on the shelves in pet stores.

I don't think it's a fungus infection because the whole body would affected and not just the ears.

Moles, warts, and epidermis labels are typical epidermis lesions that grow naturally. Even though they're generally low cancerous, they may be uncomfortable if located on a visible part such as the face. Epidermis lesions like moles and warts cause self esteem issues to the sufferers. An individual with moles normally turns into a loner since they do not desire to be noticed in public. They think uncomfortable to be out in public, therefore depression will obviously follow but you can now change all of this with this guide from here https://tr.im/F6Ywr , Moles, Warts and Skin Tags Removal eBook.
The writer of the eBook, Charles Davidson, is a practitioner in substitute medicine.  He's also a specialist in skincare, using organic therapies to remedy different types of epidermis conditions.
Moles, Warts and Skin Tags Removal program is a 100% natural program, proven to get rid of skin deformities such as for example epidermis labels, moles, and warts, no matter how big or small they are.  It is actually secure to make use of on children.

ok this is probably the weirdest answer you will ever get but it has been proven in the United Kingdom and the USA. Use cooking oil everywhere, In the ears deep into the coat and skin and leave the dog to drip in it and let it dry naturally. It stops the biting insects breathe. It will kill fleas, ticks, mites, and cure skin problems by any biting mite and will give the dog peace from constant scratching and chewing on his own body. And if you have Fleas in your home or ear mites that can transfer to and from cats do the same with the cats much cheaper than any vet and works exteremely fast and you dog will improve and may not die.
