I say a week max.... but if it still smells ok, and no slime... make sure you cook it REALLY well but. Coz of all the salt, it often preserves it more than normal meat.

NO!!!! The rule I've always used is 3 days. If meat (cooked or raw) has been opened and not eaten within 3 days, chuck it. The use by date on the bacon is for SEALED packages. Once its opened, more bacteria can get in, and there's more chance of contamination. Even if you have wrapped it well, there's still a chance.
Your bacon in the freezer however should be ok. Did you know bacon is the only meat you CAN refreeze? Providing its within its use by date of course.
And anyway, if your husband wants bacon tomorrow morning, get him out to the shop and make him buy some! lol
