Like mzJakes said, it depends on whether it was her maternal or paternal grandmother. Even if you are Jewish, you are also Catholic, just like the early Christians. Here are some good sites for Hebrew Catholics:

That you, Laszlo?
There is no such thing as "not Jew enough." If your mother's mother's mother was Jewish, then you are, no matter what religion you you raised in. (ask the nazis - they would go back even further to kill someone)
And even if you were not a Jew by birth, if you feel a strong connection with the Jewish people and desire to know more about your heritage, you should study and learn; you can become a "Jew by Choice: - a ger tzadik.
There were many Jewish families who tried to save their children during the Shoah by hiding them with Xtian families; these children were raised without knowledge of their background, yet they often felt a yearning that was unfulfilled by the "foreign" religion. You are one among many. Welcome home.

Yep. Because Jewishness passes through the matrilineal line! I don't believe there's such a thing as 'not Jew enough'! You may have to convert back to Judaism! Correct me if I'm wrong!

Technically, Judaism is matrilineal, but if your mother was a practising Catholic, you would be required to convert before most people would consider you Jewish. Also, I hate to say, you'd need a circumcision as part of that process. There's nothing to stop you from finding your roots, though.

if it was all through the women in the family (your moms grandmother, your moms mother, then your mom), then yes according to Jewish law, you are Jewish. if not, you arent Jewish. there is no such thing as being more or less Jewish but you can be more or less religious.

If you are ethnically Jewish, according to Paul, you are bound by the Jewish Law. Only the Gentile Christians are not bound by Jewish Law.

You're 1/8 Jewish?
Jewish is a religion, Israelite is a culture.
No matter what you were raised as, you can always convert. You can be fully Jewish.
Unless you are referring to Israelite, in which you would only be 1/8 Israelite.

If your mom's grandmother was your mom's mom's mom, then yes, you would technically be Jewish. Judaism is passed down maternally, so if you're born Jewish, you're Jewish, no matter what.
