So I finally learned how to make it, it tasted great, the only problem is that some of the flour and egg mix is still soggy when I take it out the pan. it's dark brown so I know I shouldn't cook it any longer, what's the trick to making it crispy and crunchy??

my recipe,
thin steaks, put them in egg, then seasoned flour, heat them up in oil (i used olive oil, does that make a difference?) 4 to 5 min on each side till dark golden brown.

I am from TN, and know how to make it taste great. Use Veggie Oil cook, batter like you normally do, dip in flour after the egg and cook. The trick is to cover the pan when you are cooking the steaks. Once you remove the steaks, add milk in the pan with a teaspoon full of flour. Stir and enjoy. Throw gravy on the steak... COVER IT>>> THAT IS KEY AND VEGETABLE OIL

Well, I don't know about country fried steak but milanesas are the same thing.
No olive oil unless you like the taste. Canola or corn oil works well. Before you put the meat into the oil, take a little piece of the flour/egg mix and drop it into the oil It should bubble strongly. That means that the oil is hot enough to fry the meat. Put in the meat slowly. Take it out when it's golden in color because it will darken as it cools. Put the fried meat on paper towels (or cloth) to try to get as much of the oil absorbed out as possible.

I've seen people who double dip ie. egg wash, flour, then egg wash and flour again. I wouldn't use olive oil, just plain Crisco or someother dehydrogentanted oil like wesson or maybe canola oil. Olive oil is not really the right type, even tho it's better for you. Make sure you have enough oil in the skillet and use cast iron 4 sure. Make sure the oil is hot when u put them in. I think 380 degrees. if you get it hotter than that, make sure u have a fire ext. handy. sounds like the oil is not hot enough to sear and that causes the oil to absorb into the crust, making it soggy and taking longer to brown. b careful when frying! best of luck and let me know if I know what I'm talking about!LOL!

Olive oil has to low of a smoke point and to strong of a flavour for this type of frying, use canola, vegetable or peanut oil, then make sure the oil is hot before you put the steak in this will make it crispy and not oil

Olive oil does not get hot enough to fry the entire steak, and covering.

You need a different oil, such as vegetable oil or shortening is best.

Try this:

Prepare a bowl of egg and milk mixed, with a little salt and pepper in it.

Put about 1 cup of flour in another bowl and mix with salt/pepper.

Heat your veggie oil (not olive - it just doesn't work right on this recipe)

Dreg your steaks first in FLOUR, then in the egg mixture, then in the flour again.

You'll know your oil is ready when you sprinkle a pinch of flour in it and it bubbles

Place the steaks in the oil, and turn them when one side is browned.

Enjoy!

Well...my guess is not to use olive oil. I do everything you do but cook in vegetable oil. Mine comes out great! I would change oils...though someone else might have a better idea. :)

try frying them at slightly lower temp for a bit longer electric ranges don't have good heat control so preheat them so they stabilize or use an electric skillet
