Everyone has different defintions for things. As far as I am concerned, "seeing someone" is more casual than "dating". But, no matter what, the understanding lies with the people involved. If you want to date other people, let the girl know those are your intentions. If you are dating ONLY her, tell her that.

like a specific date that you asked her to be your girlfriend
seeing a girl is a fling that could turn into a relationship

dating is basically exluding other girls for one girl. seeing a girl could just be a date.
im not sure there is much of a diference.
dating would be more romantic and seeing them would be more friendly...i guess.

"Seeing" someone means you both like each other but haven't committed to each other.
"Dating" means it's just him or her and no one else (Unles you swing that way).
