The Poilâne bakery in Paris introduced sour dough bread to France in 1932. They have become a household name. Their website (English version available) is here: http://www.poilane.fr/
Fact is though that just about any neighborhood in Paris will have a superb artisanal baker. They've had a spirited argument in France as to whether someone who simply sells bread that is made somewhere else should be allowed to call themselves a baker. The government ruled that they cannot.
Great bread is one of true joys of Paris.
