People of the Book is an Islamic term for non-Muslims who received scriptures which were revealed to them by God before the time of Muhammed.
Because the term only applies to non-Muslims, they cannot be counted as one of the three.
The three you are looking for are:
Christians, Jews, and Sabians (Mandaeans).

The people of the book is whom Allah has given Book or Al-Kitab as a guidance they are 3
1. Yahudi( orJews): Where Allah gave them Zabur through Daud (or David) and Taurat (or Torah) through Musa (or Moses)
2.Nasrani (or Christian): Allah gave them Injil (or Bible which claim by christian) through Isa (Jesus claim by christian)
3. Islam: Allah gave to All Human Kind and Jinn through Muhammad
Muslim are allowed to marry People of the Book and eat anything that is prepared by them, The requirement to qualify as people of the book is they must practice thier religion according to the book given ( original from Allah, without any deletion or addition). Nowdays there is no original teaching of the book, also, jews and christian dont practice their religion to the fullest. so they not qualified. Even,by chance if there are people who practice the fullest religion guided with the original book, the person him/herself will convert to islam, because the original book (all) stated that the last prophet is Muhammad and his teaching must be accepted by people of the book.
the answer given here is not complete. you must wondering lots of why(s) i suggest you make your own research. i can only give information to get some idea.

Jews, Christians, and Muslims; as they all recognize the One God, and Muslims (supposedly) hold as holy the writings of the other 2 religions.
