Guacamole
2 advocados, peeled and pitted save the pit
2 Tbsp fresh lemon juice
salt and pepper to taste
4 ounce can chopped, mild green chilies, drained
1 medium tomato, peeled, seeded and chopped
1/2 medium, finely chopped
small garlic clove very finely chopped or garlic powder to taste
Mash advocado with lemon juice (it can be mashed smooth or left a
little chunky), stir in salt and pepper, chilies, onion, tomato
and garlic. Stir. Place the advocado pit into the guacamole and
cover with plastic wrap. Refrigerate until ready to serve. Remove
the pit when ready to serve.

i'll make it short and sweet.
1. mash the peeled & pitted avacados.
2. add a couple spoonfulls of salsa..whatever you think looks good
3. juice from 1 lime..if you happen to have one..if not, just splash in some lime juice
4. minced garlic (fresh is better but the stuff in the jar works just as well)
5. salt & pepper & any other spice you think would taste good
6. stir it all up and bring out the tortilla chips!!
that's it, easy but fantastic! the more you make it, the more you'll figure out how much of each thing you should use, but this will be great for the first time or whatnots!

Hey.. Sadie and I have similar recipes! Follow her instructions. I use green onions. and the Ortega diced green chiles in the can.. I use garlic salt, pepper, lemon to prevent browning of the avocados.. another thing. I use a dash of tabasco sauce too. When you season, season to taste.. Maybe more or less garlic salt. My favorite chips for this are the Cool Ranch Doritos.. Made 5 lbs on Superbowl Sunday.. Good luck!

1 cup guacamole

Makes: 3-1/3 cups or 24 servings, about 2 Tbsp. each
1 cup boiling water
1 pkg. (4-serving size) JELL-O Brand Lemon Flavor Sugar Free Low Calorie Gelatin
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1 medium avocado, chopped (about 1 cup)
1/2 cup chopped green onions
1/3 cup pickled jalapeño slices, drained
1/4 cup lemon juice
STIR boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Pour into blender; cover. Add remaining ingredients: cover. Blend on low speed 2 min. or until well blended, stopping occasionally to scrape down side of blender. Pour into shallow 5-cup serving bowl; cover.
REFRIGERATE 4 hours or until soft-set.
SERVE as a dip with fresh vegetable dippers or low-fat tortilla chips.
How To Choose Avocados
Look for avocados that are either slightly soft or firm (depending on how ripe the fruit is, and when it will be used), ripen at room temperature, small light brown markings on the skin are normal and won't affect the insides.

Simple!
Other than avocados, you need:
- 1 tomato (cubed)
- 1 lemon (juice)
- salt
- 1/2 onion (chopped)
- 1 package of tortillas or paprika chips
use spoon to take out avocado flesh & squeeze it down with fork, add fresh cubed tomato, chopped onion, some salt & some lemon juice. Mix it, taste it & serve it with tortilla/ paprika chips!
