I bought Chunese eggplant but I only kow how to cook them one way.
How do you cook yours?

Bake them in an oven and place them on sealed plastic sheet. They will peel off easily. Slice neatly and set aside. Dice a tomato and onion, mince 2 cloves of garlic and blend them with the sliced eggplant. Prepare a vinaigrette and pour on the eggplant. You now have an eggplant salad.

Italian pasta with eggplants:
-cut the eggplants into cubes, fry it with olive oil, then mix it with tomato sauce & cheese (salt & pepper to taste).
-then use it as a sauce for your pasta

Eggplant omelette:
-grill the eggplant then remove the skin then dip ip on scrambled eggs with salt & pepper then fry it with olive oil.

Eggplant Rollatini

2/3 cup vegetable oil
1 medium eggplant, peeled and cut lengthwise into 1/4 inch slices
2 eggs, beaten to blend
1 1/4 cup dried breadcrumbs
1 cup Ricotta cheese
1 package chopped spinach, cooked and squeezed dry
1 cup grated Mozzarella cheese
4 cups tomato sauce below (or you can use a jar or your homemade sauce)
Additional grated Mozzarella cheese

Heat oil in heavy large skillet over medium-high heat. Dip eggplant
slice into eggs. Dip into breadcrumbs, coating thoroughly. Add
to skillet and cook until browned, about 3 minutes per side. Drain
thoroughly on paper towels. Repeat with remaining eggplant.
Preheat oven to 350 degrees. Mix the ricotta and the spinach
together. Spread Ricotta mixture over each eggplant slice. Sprinkle
with Mozzarella. Roll up jelly roll fashion, starting at one short
end. Secure each with toothpick. Spread 2 cups tomato sauce in
bottom of 9 x 13 inch ovenproof glass baking dish. Place rolls atop
sauce. Pour remaining 2 cups sauce over. Sprinkle with additional
Mozzarella. Bake until cheese is golden, about 30 minutes. 4
servings.


or

1 large eggplant
1 tablespoon salt
1 cup olive oil
pepper
1/2 cup grated romano cheese

Wash eggplant,but so not pare. Slice in 1/4 in slices, sprinkle salt on
each slice, and let stand 1 hour in colander. Squeeze dry with palms of
hands. Heat oil in frying pan and fry eggplant until brown on each side
over medium flame. Sprinkle with pepper and grated cheese, and serve hot
or cold. May be used as antipasto, side dish, entree or sandwich filling.
Note:Tomato sauce poured over is equally good. Sprinkle with fresh chopped basil. or dip in cucumber sauce

12 Stuffed Eggplant (Halves)

(From the Bon Ton Restaurant)

6 medium eggplants
1 pound small shrimp
1 pound white lump crab meat
4 bell peppers
4 medium onions
1/2 cup parsley
3 pods garlic
salt and pepper to taste
1/2 cup celery
bread crumbs

Boil eggplants until soft; then dig out meat. Save eggplant shells.
While you are doing this, fry bell peppers, onion, celery, and garlic
together until limp, then add eggplant meat. Let smother on medium fire
till most water is cooked out, then add shrimp. Cook for another 20
minutes, then put all of this in another bowl and fold in crab meat and
parsley. Let cool a little, ahtn add enough bread crumbs to be firm
enough to stuff shells. Sprinkle a little bread crumbs on top and
paprika. Then sprinkle a little oil or oleo on top. Bake till done or
brown in 350F oven.

I cube them and sautee them in olive oil,. crushed red pepper and salt

slice them laterally, put them in salt water, dip them in corn meal, then pan fry them in oil.
