Cheap ? Fast ? Need to go to the store ? I am having Grilled Lemon Chicken with a side salad. MMmmmmm Good !

Baked Frittata For One
2 large eggs
1 small zucchini, sliced
1 small tomato, diced
6 mushrooms, sliced
1 tablespoon butter
1 potato, cooked and diced (optional)
2 green onions, chopped
1 clove garlic, minced or pressed
1/4 cup chopped fresh parsley
1/4 cup grated cheddar cheese
salt
freshly ground black pepper
dried basil or fresh basil
Note that just about everything here is optional.
Use vegetables you like.
Use the kind of cheese you like.
And if you don't have leftover boiled potatoes, don't sweat it.
The dish will just be a little less hearty.
Preheat oven to 350F degrees.
Spray a pie plate with Pam.
Beat eggs in a fairly large bowl.
Meanwhile, heat butter (or cooking oil, but butter tastes better) in a skillet and saute the veggies of your choice along with the garlic.
When tender, scrape into the beaten eggs.
Add the parsley, cheese (try swiss for a change, or even mozzarella) and seasonings and stir.
Pour into prepared pie plate and bake for 20-25 minutes until set.
Let stand for two minutes, then cut into wedges and enjoy.


Broccoli & Garlic Pasta for One
1 tablespoon onions, chopped
2 cloves garlic, minced
1 teaspoon lite olive oil or virgin olive oil
2 tablespoons white wine
1/4 cup defatted chickens or vegetable broth
1 cup broccoli florets
2 cups cooked pasta
salt and pepper
2 tablespoons parmesan cheese or romano cheese, grated
Saute the onions and garlic in the olive oil until soft.
Add wine, broth& broccoli.
cover and cook for 3 minutes.
Toss pasta with broccoli and cook until both are heated through.
Season to taste, put on a dinner plate and sprinkle with cheese


Rice Verde for one
1 1/3 cups cooked rice
1/4 cup sour cream
2 tablespoons green chilies or green onions, or both
1/2 cup sharp cheddar cheese or monterey jack cheese
Place half of the rice in two buttered ramekins (or use one larger ramekin for whole recipe and serve to two).
Combine sour cream, chilles (green onions if using) and half the cheese in a mixing bowl.
Mix and spread over rice and cover with remaining rice.
Top with the other half of the cheese.
Bake in a 350 degree oven for 15 minutes


Shrimp Stir Fry for one
7 ounces raw shrimp, peeled
5 green onions, chopped
1 cup mushrooms, sliced
1/2 carrot
2 cloves garlic
2 tablespoons low sodium soy sauce
non-fat cooking spray (butter flavor)
Heat skillet and coat with cooking spray.
When skillet is hot, put vegetables and soy sauce in pan, stirring often.
After about 5 minutes, add the shrimp, cook until shrimp are done.


Meatloaf For One
1 large egg
2 tablespoons milk
4 tablespoons tomato catsup
2 teaspoons Worcestershire sauce
1/2 teaspoon Dijon mustard
1 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 slice bread, crumbled
1/2 lb ground beef or turkey or veal
Heat oven to 450 degrees.
In a small bowl beat the egg, milk, 1 Tbsp.
catsup, worcestershire, mustard, garlic powder, salt/pepper with a fork.
Mix well, beat in the bread; then add the meat.
Mix thoroughly to a pasty texture.
Use small aluminum foil baking tin (these can be found in the supermarket; they're disposal after use) and form loaf.
Spread remaining catsup over the top and bake for 25 to 30 minutes
