"cold pressed" means that the oil was pressed with out being heated- a slower and most costly way to press olives (and other nuts, seeds, etc) the cold press process is used in higher quality brands because it causes less deterioration of flavor and vitamins in the oil (eg- raw is better!)

it means that the juices have been extracted by squeezing the juices out of the olives using compression, (a press). This is apposed to steam distillation (as used for cloves) or some sort of boiling technique

The olives are pressed under pressure (squeezed) to extract the oil without heat. Just like apples to make apple cider, but with greater pressure.
