Maple Spring Chicken
1 chicken, 2 1/2-3 pound cut-up 1 teaspoon salt
1/4 cup melted butter dash of pepper
1/4 cup maple syrup 1/4 cup chopped almonds
1/2 teaspoon grated lemon rind 2 teaspoon lemon juice
Place chicken pieces in a shallow, buttered baking dish. Mix remaining ingredients and pour evenly over chicken. Bake uncovered, 50-60 minutes, at 325 degrees F. Baste occasionally. This baked chicken is especially good served with rice.

You can sweeten your smoothies with it, make cakes, muffins repacing the syrup for regular sugar.. Here is just an idea. You can also make maple butternut squash.
Maple Glazed Carrots
Vegetarian, Gluten-Free, Low-Sodium
Butter and maple syrup combine with baby carrots in this perfect accompaniment to any autumn meal.
Serves 4–5
* 25 baby carrots, peeled, green ends trimmed to 1"
* 2 TB unsalted butter
* 1/4 cup water
* 2 TB maple syrup
* dash of salt
Bring a medium pot of water to boil. Add carrots and cook until tender, about 3 to 5 minutes. Drain.
Combine butter, 1/4 cup water, maple syrup and salt in large skillet over medium-low heat. When butter is melted, mix in carrots and cover. Bring to a boil then reduce heat to simmer. Cook until most of liquid evaporates, stirring frequently, approximately 8 minutes. Uncover, stir, and cook one more minute.

You can use the syrup in place of sugar when making a teriyaki or BBQ sauce. Pork dishes in particular are very good with maple syrup.

A very pale mead drink. Usually, mead is made with large amounts of honey, yet maple syrup can work in a pinch!

Use it as a glaze on salmon.
Great with acorn squash, butter, s/p, cinnamon
add it to oatmeal
excellent on chicken too.

I will keep if you put it in the refrigerator. Pralines, cookies, cakes, are all great made with maple syrple.
