Tex Mex Chicken Fettuccine
INGREDIENTS:
9 oz. pkg. refrigerated fettuccine pasta
14 oz. can diced tomatoes with green chilies, undrained
9 oz. pkg. frozen cooked chicken breast strips, thawed
1 cup shredded Cojack cheese
1 avocado, peeled and chopped
PREPARATION:
In large pot of boiling water, cook fettuccine according to package directions and drain well. Set aside.
In the same pot you used to cook the pasta, combine undrained tomatoes and chicken and cook over medium heat until mixture begins to bubble, about 4 minutes.
Add fettuccine and toss to combine. Serve with cheese and avocado. 4 servings

Shake and bake chicken, classy ; ) try stuffed manicotti or shells:
cook the pasta
mix parmasan, ricotta, and mozzerella
stuff pasta and put in baking dish
cover with pasta sauce and more cheese
bake
serve with fresh french or italian bread and a salad
can also mix sausage with the filling, but it is not as healthy

here are two really easy meals and they are good!
spag bake: 1 bag med egg noodles, 1 jar of spag sauce, 1 jar of alfredo sauce, 1 2 cup bag of shredded moz cheese, and 2 boneless skinless chicken breasts cut up and cooked...mix all together and heat till hot then serve...very yummy!
chicken mac: 2 cups elbo noodles (not cooked), 2 cans cream chicken soup, 2 cups milk, 2 cups (or one bag) shredded cheddar cheese, and 2 boneless skinless chicken breasts cut up and cooked...mix everything, poor in a 9 by 13 in pan, cover and bake at 350 for 1 hour...yummy!
now i know these are kind of big recipes...they are comming from a family of 5 but they do make for really good leftovers too!!!

Go to Kraft Foods, they have some wonderful, easy & quick dishes. They even note the difficulty of the recipes.
