So I bought a nice Salami from Salumi (probably absolutely best-cured meat spot in Seattle). It's sitting room temperature right now because it was sitting that way in the shop. However, should i store it in the fridge? How about after I slice it open?

If you have a room for food, with temperatures slightly above those of the fridge, and dark, with no windows, that would be ideal. But the fridge is better than sitting room temperature. To eat take it out of the fridge about 15 minutes before you're going to eat and cut only so much in slices as you will eat. Now the salami must be stored in the fridge. Where you've cut you seal with a tin foil or a plastic foil.

So far as spoilage is concerned a salami doesn't have a lot of place to go. That's the beauty of the salted, cured meats: they are so loaded up with nitrates they are invulnerable to a wide range of microbes or fungi. People store a salami in the fridge--as why not?--but the salami predates refrigeration. The real danger is drying out. As long as it is not sliced then you've got a dry salami! No problem.

Well, you can store it at room temp but it will spoil quicker than if it was in the fridge.

Salted and cured meats can stay at room temp for much longer time periods than fresh meat.

Being that Salami is both cured and salted, it should be good to go for a while. Although, I would not recommend eating a slice that's been out for more than 6-8 hours. If its unsliced, you have a much longer time frame.

All the delis in Montreal keep their unopened salamis hanging up at room temperature. After they are opened, they all refrigerated, covering the opened end with Saran or similar type wrap. Being a spiced meat product, salamis tend to remain edible for an incredibly long time, even after they're dried out and shrivelled! Enjoy!!

Once you take it out of its sterile airless packing, it has to go to the fridge. It is best to slice off a chunk of what amount you can eat in one sitting, through its packing plastic wrap instead of unraveling the whole entire salami. Put a soft plastic wrap on the meat itself , then wrap the entire thing with aluminum foil and stored in the fridge.. The chunk you had portioned out can then be unwrapped and sliced into your meal.

I think that the best way to store your salami is in a cold, DRY place. Do not place it in the fridge until you've cut it open.

The best way to me to keep good storage of Salami is to wrap it up in aluminum foil or to put it inside of a "GLAD" closed in plastic container. So that th meat won't turn red or won't be burned in no type of way. Yes you should put it in the refrigerator but put it in a container.

Storing it in my tummy would be nice, but you might not want it back after that. Love Good Salami.

Lightly chilled as in, cut it in half assuming that you bought the whole log, and bring it out about an hour or two before serving. Don't forget to cover the ends.

Yum!!!
