I have an idea for a yellow cake with white frosting topped with coconut. I was wondering can I bake coconut into the cake itself? Would it work like chocolate chips where you just add them in during the mixing process? Thanks for any and all suggestions.

You can add the coconut(shredded preferably) during the mixing of the dry ingredients and have wonderful results. Sprinkle the coconut onto the cake using a colander(strainer's work only if the holes are big enough) to distribute the coconut evenly. Just don't get the sweetened coconut(the kind with powdered sugar) otherwise the cake will be too sweet!

sure it should work... whether you can tell there's flakes of coconut depends upon how much you put. If you put too much, the cake may come out "gritty"... but it's worth a try.

Experiment with cupcakes, first, to see how it turns out.

Sure can. For each cake mix i would use about a cup as to not make it overwhelming. Sounds tastey.

yeah you can just mix in, I mix cocnut into white chocolate cookies

Yes you can just throw it in or slightly toast it either way sounds great.
