I currently use a Nikon D200 but if money were no object, I'd upgrade to a Nikon D2Xs. The D2Xs offers another 2 megapixels (12 total), another 3 FPS (8 total), and a better AF system. The added size and weight is no problem. But as it is, I can't justify spending an additional $3000 for those extras.
The Canon 1Ds Mark ll it provides yet more megapixels, better image quality (yeah, I said it) and a full size viewfinder. The deal breaker is that it only does 3 FPS. (Nikon has combined their high resolution - high speed models, but Canon hasn't... yet.)
None of the other brands have anything that can even touch the semi-pro Nikon D200 / Canon 30D.
With that D2Xs, I'd keep my Nikon 17-55mm f/2.8 as the standard zoom, I'd upgrade my telezoom to a 70-200 f/2.8, I'd keep my 50mm f/1.4 and macro, upgrade my SanDisk Extreme lll cards to Extreme lV, and add a Nikon 85mm f/1.4 and a Sigma 30mm f/1.4. Throw in an SB-800 flash gun and a Gitzo 1227 tripod with the Arca-Swiss B1 ball head and you're set.
Now if you'll excuse me, I need to wipe the drool off of my face.
---
added feb 22nd. Canon just announced a new 10 megapixel, 10 fps model: http://www.dpreview.com/news/0702/07022208canoneos1dmarkiii.asp
Could be tempting... but the Nikon D2Xs is available NOW.

OMG has me drooling, also.
I own a D200 and the same 17-55 lens that he has and this is a great set-up. I have the infamous 18-200 VR lens to carry when I am not being ultra-hyper-critical about image quality, although it is still a very good lens.
For my purposes, I don't think I'd go beyond the D200, as I have not come close to exploiting all of its capabilities anyhow.
This camera and the 17-55 lens will cost about $2,500, so it's not even up there in the "price is no object" range. This will let you add a few lenses, as suggest by my friend OMG.

I too would go for Nikon D2Xs. With Canon you don't know if they will screw you by changing their lens mount again, and what Canon camera will give you double exposure capability when you need it.
