I need to know how to record phone conversations.

For the most part recorders aren't built into any telephone systems. I haven't personaly worked on a AVAYA system but I haven't ran across any other system that does include them. Usually to have a phone conversation recorded you need to buy a telephone recording system. You feed what ever lines you to be recorded threw the system and then out to your phones.

Here is a link to some small telephone recorders. They also make larger one which can handle more than one line, used for call centers and emergency respone centers(911).

on some phone systems, you can have the option to record a call into your voicmail by pressing a key on the phone or dialing a code, the call is then stored in you voicemail box to listen to later

There's a button on your phone that actuates the recording.
