I need some new cookbooks (no websites, please).

Which of your cookbooks have the most cooking stains on the pages, or do you use for reference. Why do you like your favorites?

I currently rely on my Dean Lucas Book of French Cooking and my Cooking Light Annuals.

Ethnic, vegetarian, Annual, it makes me no difference.

The Professional Chef...you have to scale the recipes down, but great techniques, pictures and recipes.
King Arthur Flour's Baking companion is the best cookbook for baking. Great, fool-proof recipes.
And invest in Mastercook. Its so handy to just input recipes that you love, so that they are right there on the computer.

The best basic one is "The Joy of Cooking". It will give you suggestions, measurements, etc. Other than that, it depends on your preference. There are cookbooks out there for any nationality, desserts, anything you want.
