Can anyone tell me how to make a filling for a coffee sponge.Ibought camp coffee,do i use that ,or any other coffee. thanks in advance.

Camp coffee is excellent. that is what i always use.

8oz icing sugar
4oz butter
1tbsp water
1tbsp camp coffee

combine all ingredients in food mixer. makes a lovely coffee butter icing. Alternatively you could put chocolate butter icing in it instead substituting 2 0z icing sugar for 2 oz cocoa

I just make a basic buttercream (butter and icing sugar) and add about a tablespoon of very strong black coffee - about a heaped teaspoon of coffee powder/granules dissolved in a couple of tablespoons on hot water, then cooled. You can vary the strength of the coffee to taste.

camp coffee is excellent for your sponge flavour.but for filling do fresh whipped cream and tinned Mandarin or coffee butter cream and walnut.

camp coffee is gd mixed with butter cream or for a variation use banana flavouring it goes well with coffee

1 cup milk
1 cup cream
2 egg yolks
60 ml sugar
45 ml cornflour
5 ml vanilla extract
25 g butter
While cake is in oven make filling.
Scald milk and cream. Beat egg yolks with sugar until light and creamy. Add cornflour and vanilla extract; then slowly add scalded milk and cream. Cook on top of double boiler stirring until mixture thickens. Stir in butter and set aside to cool.
Once cake is cool split cake in three layers carefully and sandwich together with custard.

2 tablespoons instant coffee
1 cup scalded milk
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 eggs, well beaten
1 teaspoon butter
1 teaspoon vanilla
Scald coffee with milk.
Mix sugar, cornstarch, salt and well beaten eggs.
Strain milk; add gradually to sugar mixture.
Add butter; cook in a double boiler until thick and creamy, stirring consantly.
Add vanilla and cool.


or


1 cup 35% cream
1/2-3/4 cup sifted confectioners' sugar
1 tablespoon instant coffee (or any other flavourful coffee of your choice)
Mixed all three ingredients in a medium sized glass bowl.
Beat ingredients still stiff.
