Im trying to suprise my wife with a simple dinner tonight and have decided to marinate chicken in italian dressing. How long should it marinate? Thanks in advance!

I like to do it overnight but since you need to make it tonight go ahead and marinate it as long as you can. Then grill that bad boy, or bake it. Grilling is the best!!! (My personal oppinion)

As little as 30 minutes up to 2 hours. You don't want to marinate it too long because the vinegar in the dressing will break down the chicken meat. You can allow a little more time for skin on chicken pieces vs. skinless, boneless chicken.

Generally, the more acidic a marinade (ex. vinegar, lime, lemon or juice) the shorter time needed for marinating. The acid will help tenderize the meat and it will absorb the marinade faster.

BTW, if you are going to grill the chicken let the marinade drain off a bit so you get good grill marks.

You can baste the chicken with the left over marinade but be sure to let the chicken cook a few more minutes after the last basting.

Discard the leftover marinade and wipe all surfaces that have come into contact with raw meat to avoid food borne illness.

I have a recipe that says as little as 30 minutes, or up to 3 hours. But make sure that you use a fork to poke holes throughout the chicken, so that the chicken will absorb as much of the marinade as possible. I've tried it marinating all day while at work, and that worked fine, also. Good luck!

A minumum of one hour to get the flavor but even 20 minutes will do. Hope your wife enjoys the surprise!!! Bon Appetit!

As little as half and hour, you can always baste the bird while it cooks which is better to retain the Italian seasoning flavor as you get to the end of cooking time

I always try to marinate chicken for atleast 4 hours. longer is always better though.

2 to 3 hours would be fine....just long enough to let the flavor and moitness soak in....good luck!

It tastes better if you grill the chicken on a charcoal or gas grill if you can.....I make it all the time!

I wouldn't do it any longer than an hour.

After more than that the chix starts to get dried out.
