I live in a university residence and I find it increasingly difficult to eat well. I am blessed with a full kitchen in my dorm though so at least I can cook. The problem is I'm not good at it! If anyone has some good and fairly simple meals and recipes I can follow, please share them with me!! Any helpful websites you've come across would be helpful as well, although I prefer recipes you've tried and know it's good. Thanks a lot.

Oh, and I should mention that I'm not a big fan of meat; vegetarian recipes would be especially helpful

Jacket potatoes with various fillings are cheap and filling, Vegatable lasagne ...... or a nice fish pie using fresh fish from local fish mongers ( who may have pieces he has trimmed off the fillets, therefore it would be cheaper ) steam the fish then put in casserole dish and add a cheese sauce and then top with mash potatoes and grate some cheese and sprinkle over the top of the potatoes .. cook in the oven until piping hot and the top is golden brown. Serve with vegatables

Ready In: 20 minutes

Ingredients
1 Box of any kind of pasta cooked (spaghetti is best, but anything will work)
3-4 Tomatoes, cut into any size pieces you like
1 block Mozzarella—cubed
1 bunch fresh Basil—chopped
A drizzle of Olive Oil

Directions
Cook pasta.
Chop tomatoes, basil and mozzarella
Combine all the ingredients in a bowl and drizzle a bit of olive oil on top.
Salt to taste.

try veggie in a pan.
buy deep frost mixture of broccoli peas carrots etc etc.
put them in boiling water for a minute take them out before they become 2 soft.put them in a frying pan with some butter...of margerine if u don't like any animal products.add little salt .it's really tasty.

or try a risotto.it's easy.boil rice.in the time the rice boils pun some onions and paprica and tomatoes and champignons in a frying pan with some oil.little.let it fry 2-3 minutes.add the rice that is not completly done and stirr.add some water salt and pepper.cook till it's done.

both recipes take less than 15 minutes

Grilled Vegetable Ratatouille

Ingredients:
3 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon thyme
1/2 teaspoon ground black pepper
4 small eggplants, cut in half lengthwise
2 small zucchini, cut in half lengthwise
1 medium red onion, quartered
1 red bell pepper, halved and seeded
1 yellow bell pepper, halved and seeded
6 ounces uncooked bite-sized pasta
1/2 cup reduced-sodium vegetable broth
1 tablespoon honey
1 tablespoon Dijon mustard
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1 cup cherry tomatoes, halved

Combine vinegar, oil, thyme and black pepper in a shallow dish. Add eggplants, zucchini, onion and bell peppers and toss evenly to coat. Cover and let stand at room temperature for 1 hour. Cook pasta according to package directions without salt or oil. Drain and rinse well with cold water. Remove vegetables from marinade and reserve marinade. Grill vegetables over medium heat for 3-4 minutes per side or until tender. Cool vegetables and cut into 1-inch pieces. Combine vegetables and pasta in a large bowl. Add remaining ingredients to the reserved marinade and mix well. Pour dressing over vegetables and pasta and toss to coat. Gently stir in tomatoes and serve.

You should check out Rachael Ray's 30 minute meals on foodnetwork.com. She makes cooking simple and fun and her recipes are quick and easy. She does a lot of vegetarian cooking too, and has a ton of recipes! Check it out!

Chicken Pizza-Look next to the tuna and buy a can of cooked chicken(1.50)...shred with fork. prepare a pizza crust from the package(just add water costs about .40) For sauce you make a little bit of white sauce(i'd say 2 TBL marg,2 TBL flour and 1c milk stir over med heat til thick) season sauce as you like. I use spinach and herb seasoning from Tastefully Simple , add chicken ,top with cheese and bake. It's cheap,easy and fast

Creamy Fettucini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% lowfat)
8 oz. fettucini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, parmesan cheese, margarine and milk;
Stir over low heat until smooth. Add to drained fettucini and toss lightly. Sprinkle with fresh parmesan cheese if desired. Makes 4 servings.
This is good, easy, and healthy. Enjoy!

Cauliflower mash-

One head of cauliflower
3 cloves of garlic
3 tbsp butter (any low fat butter will work)
1/2 C. parm. cheese
Salt and Pepper to taste


Cut Calif into Florette's and steam along with garlic until fork tender.
Drain remaining water
Add butter and parm cheese mix well
Add salt and pepper

Enjoy a healthy alternative to potatoes.

steamed fish with sesame soysauce.

2 pcs medium size St. Peter's fish (Tilapia) or any fish preferably tilapia or lapu lapu (if you have filipino friend, try to ask them what are these fishes. I don't know how to call it in english hehe)

medium size ginger
salt and pepper to taste.
vinegar

rub fish with salt and pepper and let stand for half an hour. steam fish on top of a mixture of water, vinegar, ginger and celery. steam it for 20min or until well cooked

for sesame soysauce:

in a sauce pan, pour some sesame oil and soysauce and let it boil.

pour sauce on top of fish and sprinkle some spring onion and sesame seed on top.

enjoy this mouth watering oriental food. try it and you will surely love it as i do.
