I know that these scholars are very important in critical and poststructuralist theories. But I am very new to their work. I haven't taken any classes that introduce their work, but I'm very interested in learning about it. So what do you suggest to get started?

Instead, try Milton Friedman, Frederick Hayek, Alexander Solzenitsyn, Whitaker Chambers, William F. Buckley, David Horowitz, Mark Steyn, Michelle Malkin, Lora ingraham, David Limbaugh, Bernard Goldberg & Ann Coulter.

Foucault is a difficult read, but well worth it. Probably his most well known books are "Discipline and Punish", "History of Sexuality volume 1", and "Madness and Civilization." They're all really interesting; I would recommend one of those. Especially if you start with "History of Sexuality," I would recommend reading "Saint Foucault" at the same time, although I can't remember the author of that one. It unpacks a lot of stuff, and really helped me out. Especially since you're not taking a class and probably don't have too many people talk about it with, that will help you a lot. Chomsky I don't know very well, so no help there. Good luck!

I suggest you read something that a normal person can understand, which rules out Foucault.
