MOROCCAN TOMATO AND PEPPER SALAD

1 md Green bell pepper
1 md Tomato, blanched, peeled,
-seeded, and diced
1/2 md Cucumber, pared, seeded, and
-diced
1 tb Plus 1 1/2 teaspoons lemon
-juice
1 tb Water
2 ts Olive oil
1 1/2 ts Minced fresh parsley
1/2 ts Seeded and minced green
-chili pepper
1/4 ts Paprika
1/8 ts Each ground cumin and minced
-fresh garlic
On baking sheet broil bell pepper 3 inches from heat source, turning
frequently, until charred on all sides; transfer pepper to brown paper bag
and let stand until cool enough to handle, 15 to 20 minutes.
Fit strainer into medium bowl and peel pepper over bowl; remove and discard
stem end and seeds, allowing juice from pepper to drip into bowl. Cut
pepper into strips and add to bowl with juice; add tomato and cucumber and
toss to combine.
In measuring cup or small bowl combine remaining ingredients; mix well.
Pour over vegetables in bowl and toss to coat with dressing; cover with
plastic wrap and refrigerate for at least 30 minutes. Makes 2 servings.

Cottage Cheese Vegetable Casserole

1 c Thinly sliced carrots
1/2 c Chopped onion
1 tb Reduced calorie margarine
1/2 c Sliced mushrooms
1 (8 ounce) pa noodles,
- cooked and drained
2 c Low-fat cottage cheese
1/2 c Skim milk
1/2 t Salt
1/2 t Basil
1/4 t Thyme
1/8 t Pepper
Yield 12 servings - 1/2 C ea. Each serving may be exchanged for: 1
Bread, 1
Low-Fat Meat
Parsley sprigs (optional)
Combine carrots, onion and margarine in non-stick skillet; cook on medium heat until tender. Add mushrooms and cook 5 minutes; set aside Combine remaining ingredients, except parsley, in large bowl; stir in cooked vegetables. Turn mixture into nonstick 2 Qt. casserole. Cover and bake at 350 for 30 minutes or until bubbly. Garnish with parsley before serving,
if desired.

Baked Zucchini
2 medium zucchini
2 tablespoons butter, melted (or olive oil)
1 tablespoon fresh oregano or 1 teaspoon dried oregano
1/4 cup parmesan cheese, grated
salt & pepper
Slice zucchini in 1/4 inch slices.
Toss with melted butter and oregano.
Arrange in a single layer on a greased baking sheet.
Sprinkle with parmesan cheese.
Bake, uncovered, at 350 degrees F for 35-40 minutes.
Season to taste with salt and pepper.
Pan-Fried Okra, Onion, and Tomatoes
2 lbs fresh okra
1/2 cup vegetable oil
1 medium red onion, thinly sliced
2 large tomatoes, seeded and thinly sliced
2 tablespoons lime juice
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
1 teaspoon chicken bouillon granules
Cut okra in half lengthwise.
Pour 1/4 cup oil into a large skillet over medium-high heat. Cook okra in hot oil, in batches, 6 minutes or until browned, turning occasionally. Remove from skillet, and drain well on paper towels. Repeat with remaining okra, adding remaining 1/4 cup oil as needed. Cool.
Stir together onion and next 5 ingredients in a large bowl; add okra, tossing to coat.
Serve at room temperature.
Roasted Potatoes and Peppers
1 1/2 lbs tiny new potatoes
1 onion
1 bell pepper (red, yellow or orange)
1 1/2 tablespoons olive oil
1 garlic clove, crushed (or more)
1 tablespoon rosemary, fresh, chopped
salt & freshly ground black pepper
Preheat oven to 375°F (190°C).
Wash potatoes.
Halve or quarter larger potatoes.
Cut onion into eight pieces.
Cut peppers into one-inch pieces.
Combine oil and seasonings in a plastic bag. Add vegetables and shake to coat with seasonings.
Place in shallow dish and bake uncovered in the oven, until potatoes are tender, about 40-45 minutes, stirring once.

Brocolli sauteed in a little bit of extra Virgin olive oil. You steam the brocolli just uintil crisp tender, run it under cool water to shock it into not cooking anymore and it keeps its color, pour about 2 tbsp. of the olive oil in a skillet on med. low heat, ad a clove of minced garlic, 1/2 tsp, basil and 1/2 tsp. oregano, let it infuse into the oil for about 2o seconds, then ad broccoli and toos, delicious.
You can add chopped tomatoes as well if you like

Baked vegetables - parboil the really crunchy ones like carrots, then add whatever else you like. Toss with a little olive oil, salt & pepper and bake at 350 until tender.
