Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian bread crumbs, parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.
Serving Suggestions:
I serve this with Fettucini Alfredo and garlic bread.
Creamy Fettucini Alfredo
1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% lowfat)
8 oz. fettucini, cooked, drained (I use the fresh Contadina low fat one)
In large saucepan, combine cream cheese, parmesan cheese, margarine and milk;
Stir over low heat until smooth. Add to drained fettucini and toss lightly. Sprinkle with fresh parmesan cheese if desired. Makes 4 servings.

I got this great recipe from my weight watchers cook book, but its not bad at all. It is oven fried chicken. You use buttermilk, flour, salt, pepper, plain corn flakes. Put the buttermilk in a bowl. Smash up the corn flakes and mix about 1/2 cup with 3 tbsp of flour and 1/4 tsp of salt and peper. Dip the chicken into the buttermilk and then into the dry ingredients. Place chicken on a cookie sheet that was sprayed with pam, dredge the chicken with oil, cook on 350 for 30 minutes, turn chicken then another 30 on other side. I know you asked for boneless, but I think this works best with thighs.

I've used it to make chicken enchiladas. You chop up the meat then cook it in the skillet until done then add a half a cup of chunky salsa and a cup of shredded cheese. Put about a heaping spoon of it down the center of a flour tortilla, roll, and put in a 13 by 9 inch pan that has about a cup of salsa spread over the bottom of the pan. You can fill 10 tortillas with this mixture and they will fill the pan. Top the tortillas with a cup of salsa and a cup of cheese and bake in a 350 degree oven for 20 to 25 minutes until heated through. It takes about a pound and a half of chicken meat for the recipe and a couple of jars of salsa and a bag of shredded cheese.

QUICK CHICKEN CASSEROLE
4-5 skinless, boneless chicken breasts 1-2 can cream of chicken soup (can use chick/mushroom) 1 package of slice swiss cheese 1 16oz bag of peperidge stuffing (herb flavor) Preheat oven to 350 degrees Place chicken in a baking dish spread can soup over chicken (DON'T ADD WATER) Place 1 slice of cheese over chicken breast Top with stuffing--right out of the package--you want it crunchy because it is the topping. Bake for 30-45 minutes, or until chicken is done. If you don't like swiss cheese, you can substitute it for a different type.

Chicken Piccata
6 to 8 chicken breast halves, boneless, no skin
1/2 cup flour
1 1/2 teaspoons salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon paprika, or to taste
3 tablespoons butter
2 tablespoons olive oil
1/4 cup chicken broth or water
3 tablespoons fresh lemon juice
6 to 8 thin slices of lemon
3 tablespoons capers (optional)
PREPARATION:
Put chicken breasts between 2 sheets of waxed paper or plastic wrap; pound to flatten to about 1/4-inch. In a shallow bowl, combine flour, salt, pepper and paprika; dredge chicken breasts to coat well.
Heat butter and olive oil in a large skillet. Sauté chicken breasts in batches, about 3 minutes on each side.
Drain off all but 2 tablespoons of fat. Stir in chicken broth, scraping to loosen browned bits. Add lemon juice and heat through. Return chicken to the skillet with the lemon slices; heat until sauce thickens. Add capers, if using. Serve with your favorite pasta and a green vegetable.
Chicken Piccata recipe serves 6 to 8.

LEMON CHICKEN SALAD
1 small head of green leaf lettuce
4 boneless, skinless chicken breasts
juice of 1 lemon
1 tbsp. oil
1 tbsp. freshly chopped tarragon
salt and pepper to taste
vinaigrette salad dressing to taste
Directions:
Wash and dry the lettuce. Tear into small pieces and set aside.
Slice chicken breasts into strips and then cut strips into small pieces.
Heat oil in a medium-sized pan, add the chicken, and cook for 4 to 5 minutes until the chicken is lightly browned.
Add lemon juice, tarragon, and salt and pepper to taste. Cook for another 4 to 5 minutes until chicken is tender.
Toss the lettuce with the vinaigrette dressing. Add chicken, lemon, and tarragon mixture and toss.
Serve immediately.
Serves: 4

There so many possibilities with chicken! Here is one of my favorite ways to prepare chicken breast. Take your favorite bottle of salad dressing (Italian works best) and pour over chicken to cover, place in refrigerator for at least 30 mins. you can marinate chicken for up to a couple hours for best flavor. Then grill on the barbecue at medium high heat until chicken is no longer pink usually 10-12 mins be sure to turn chicken half way through cooking. Then serve with brown rice and a mixed green salad, healthy and delicious!

1 chicken breast
1 thin slice of ham
2 slices of american or swiss cheese
2 thin slices bacon
Preparation:
pound chicken breast until it can be rolled
roll slice of ham and slices of cheese up in chicken breast
wrap bacon around outside and hold in place with toothpick(s)
put in 350 degree oven
cook until chicken is cooked through (about 30 min ?)

Southwest rooster rooster breasts(duh) a million can of yellow corn a million can diced tomatoes a million can of black beans (rinsed nicely) a million small onion diced a million teaspoon cumin ( greater or much less finding on your tastes) a million/2 teaspoon chili powder (lower back, on your tastes) combination all aspects in a bowl and pour over rooster breasts. conceal and bake at 350 tiers for an hour.
