Because their brain is not fully asleep as it should be. I often talk in my sleep now, as a child I yelled and sleepwalked and even broke my toe because I kicked in my dream and also in real life...unfortunately the wall was in the way ...OUCH! lol

There are a number of conditions that cause this behavior. Often veterans with post-traumatic stress disorder are quite agitated in their sleep - my aunt had to get a separate bedroom to protect herself from my uncle's nighttime violence - and he was sweet and loving and mild-mannered while awake. Some medications can cause people to struggle and cry out in their sleep. If it is happening frequently, a medical evaluation is in order.

My cat twitches her paws in her sleep as if she's running. I've never figured out if she's dreaming of chasing something or being chased.

This question interested me enough that I did some Internet reading. I think you'd find this site interesting: http://www.emedicinehealth.com/rem_sleep_behavior_disorder/article_em.htm
