He doesnt want to even try them, or new food for that matter. I am worried about his health down the road if he keeps eating this way...any ideas?

My boyfriend's the same way. He says he won't eat "rabbit food," and he consumes almost no fiber, which drives me nuts. When I make goulash, I put in plenty of tomato and onions and he'll eat them then. My guy won't eat it, but you might try chili (loaded with beans, tomatoes, onions, and peppers). My mom makes mashed potatoes sometimes with parsnips and carrots. (She steams them all and then mashes them together.) I don't really care for them, but dump some gravy on and he probably won't notice. Also, get him to eat a lot of fruit. My guy will eat apples and bananas and stuff. If he takes a lunch to work, stuff some in there. Try grains, too. Whole grain pasta and bread have a lot of fiber in them, which is one reason vegetables are considered an important part of your diet.

I see a lot of other people saying your boyfriend is not your responsibility, but I understand how you feel. If you're planning on a future with him, then his "down the road" is your "down the road." Good luck and don't stop trying.

My boyfriends the same way. He doesn't eat any veggies. I cut them up as fine as possible and put it in his food. He says he likes the flavor of some vegetables but not the texture. I cook with vegetables but I have to take them out or he won't eat. I'm hoping he gets some of the vitamins that way. Make sure he takes a multivitamin. I worry about his health to.

Eat only when hungry. Eat not more than three times a day unless u r diabetic. Eat nourishing food with plenty of fresh fruits and vegetables being part of it. Chew each morsel at least 32 times. This will activate signal to the brain as soon as u have had enough. Besides this change in eating style, take regular light exercises and brisk walks every day. U will be able to gain/shed all extra weight gracefully and in a reasonable time span.

Good question, the only vegetable my Husband will eat is green beans, and that isn't very often. He doesn't eat much of anything, the pickiest eater I have ever seen in my whole life...
I can't get him to try anything new, and he usually eats junk food.
What I plan on doing, is taking him for a check up, then let the doctor tell him what he needs to change his eating habits too.

He's not a child. If he doesn't want to eat them you can't make hi and I wouldn't recommend tricking him. See if he will take a good multivitamin, one from a vitamin store not the grocery store.
See if he will drink green tea and if he likes dark chocolate both are full of antioxidants.
He might be a super taster (I am) and just cannot stand the taste of them.

I realize that you worry about your boyfriend's health but he's a big boy and he knows the consequences. Drop the subject but continue to offer and share vegetables and new foods.

Vitamins...cook with vegies and then don't serve him them...That way they are absorbed into the meat. I'm sure in the long run he will be fine. There are plenty of nutty vegans out there, not that their is anything wrong with that and obviously they are thriving.

he's your boyfriend, not your son, and it's his body...just leave him alone about it, and maybe eventualyl he'll have some. We can worry about their health all we want but in the end they're the only ones who can change it!

Dress up the veggies with different sauces and dips.

If all else fails, deny him sex till he at least tries them.

make a fresh squeezed orange juice and see if he'll drink it, if so, then ask him what other kinda juice he likes
and then eventurlly feed him vegg juice

i hate fruits and veggs, but I will drink juice because it's easier to eat when i drink it, and i'm lazy so i don't want to cook
