INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desired
Heat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F.
Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.
Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.
Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)
Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.
Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.
Yield: 12 pancakes

Gingerbread Pancakes with Lemon Sauce Recipe
Yield: 10 servings
Ingredients:
1-1/3 cups all purpose flour
1 tsp. baking powder
1/4 tsp. each baking soda and salt
1/2 tsp. ginger
1 tsp. cinnamon
1 egg
1-1/4 cups whole milk
1/4 cup molasses
3 tbsp vegetable oil
Lemon Sauce:
1/2 cup granulated sugar
1 tbsp. cornstarch
1 cup hot water
2 tbsp. butter
1/2 tsp. grated lemon peel
2 tbsp. lemon juice
Instructions:
1. Stir together dry ingredients.
2. In a separate bowl, beat egg with milk. Beat in molasses then oil.
3. Add flour mixture and stir until combined. Batter will be lumpy. Lumps will cook out.
4. Grease a griddle or frying pan. Use approximately two tbsp. Of batter for each pancake. Turn when the pancake appears to be dry and bubbles appear on the top. Flip and cook the second side until lightly browned. Watch these closely - they burn easily.
Lemon Sauce:
1. In a medium saucepan, mix sugar and cornstarch. Gradually add hot water. Cook, stirring over medium heat until the mixture is thick and clear.
2. Add remaining ingredients, stirring until butter melts.
3. Serve warm. This does not store well - so invite everyone over and use it up!

Pancakes
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons cooking oil
1. In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well in the center of the dry mixture; set aside.
2. In another medium mixing bowl combine the egg, milk, and cooking oil. Add egg mixture all at once to the dry mixture. Stir just till moistened (batter should be lumpy).
3. For standard-size pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. For dollar-size pancakes, pour about 1 tablespoon batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 2 minutes on each side or till pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. Makes 8 to 10 standard-size (4-inch) or 36 dollar-size (2-inch) pancakes (8 servings).

Yes. But, if you don't want to fool with mixing up flour, eggs, milk and oil--buy a ready to use mix or one in the box that you only add water to. It already has all those ingredients in it. If you want to simplify making pancakes from scratch-use self rising flour, you can eliminate salt and baking powder.

This is really hard to describe...
Essentially after you mix the batter, you pour some out into a hot griddle into a circular shape, watch the top of it for bubbles and check the bottom occasionally to make sure it doesnt burn, then flip it over to cook the top side briefly, and serve right from the griddle.
If someone can describe this process better, please do so... It's not really hard to do, its just hard to describe.
