I have a friend that I talked to about my strong feelings for her but that I could not date at the moment. We decided to stay friends. Anyway, things lately have been pretty strong between us, and I have been sending hints of interest. She said in an email that she loves our witty banters. She and her best friend love to make fun of me in a joking manner for a laugh. She really enjoys our conversations and really wants to get to know be better, and she wants to read my poetry! I also catch her eye a lot, and during dance class, we do a lot of unplanned handholding. How does she feel?

The question here is have you asked her how she feels? it seems you want to know from someone how she feels and what she is thinking but you may not get what you are looking for in an answer if you don't ask her yourself, you maybe surprised at what she has to say and what she feels, you might be just afraid to ask her feeling that she might reject you and that is normal, but if what to know then you need to ask her, if she knows that you are interested in her then chances are she might just take you up on an offer like asking her out on a date. I am sure it might sound awkward that she is your friend but you might have to push that aside and think of what you really want to do, it won't get any better until ask her, if it turns out that she rejects you then you tried and you just need to move on but still be friends with her.
