The simple answer is it doesn't make any difference how the meat is cooked. Red meat isn't all bad -- it's a good source of protein and many minerals your body needs, but a lot of red meat is very fatty, and the fat in red meat is all saturated (which is very bad for you). If you want to eat red meat that isn't as "bad" for you, eat leaner cuts of beef and pork. You're better off eating a top sirloin steak that's medium rare than you are eating a ribeye steak that's well done.

it has to do with the various fat contents from the different cuts of meat not the degree of wellness that it is cooked to.

many people that talk negatively about beef have no real knowledge of the nutrient breakdown in terms of the fat content. depending on the cut of beef there can be an equal ratio of unsaturated fats as to saturated fats. we also now know that genetics plays a bigger role in the total cholesterol values than the dietary intake.
