AMOS' FAMOUS CHOCOLATE CHIP PANCAKES
WHAT YOU NEED:
1 lg. mixing bowl
Pancake batter (Bisquick works fine)
Chocolate chips
Vanilla yogurt (& fresh berries, if you have any)
Butter
Banana (optional)
Mix up batch of pancake batter. Add chocolate chips to batter (for every cup of flour or dry pancake mix you use, you'll need about 1/3 to 1/4 cup chocolate chips - miniature chips work best). (Optional - add chopped banana to batter.)
Gently mix batter. Lightly grease and heat griddle or skillet with butter. Pour a little less than 2 tablespoons of batter for each pancake. W hen little bubbles appear all over the top uncooked side of the pancake, it's time to turn it over. Cook second side until its' light brown. Serve pancakes with yogurt (and berries, if you have any) on top.
APPLE CINNAMON PANCAKES
4 c. diced apples
2 tsp. cinnamon (heaping)
4 c. dry complete pancake mix
3 1/2 to 4 c. water
Mix pancake mix with water. Add water slowly; alternate with apples and cinnamon as the apples will make mix more watery. Only add enough water to make a pourable mix - not watery. Heat griddle to 400 degrees or when drop of water dances in pan. Pour 1/4 cup of batter per pancake; flip when batter bubbles and raises. Serves 4 to 6.
BANANA - SPICE PANCAKES
1 c. pancake mix
3/4 c. milk
3/4 c. mashed ripe bananas
1 egg
1 tbsp. vegetable oil
1/2 tsp. cinnamon
Heat lightly greased griddle over medium heat. Combine all ingredients, mixing until batter is fairly smooth. For each pancake, pour scant 1/4 cup batter onto hot griddle. Turn when pancakes begin to rise and edges look cooked. Makes 8-10 pancakes.

It really depends on what you like .. my grandma used to make pancakes for all of the grandkids on days when we were all there and she would put out quite the spread for toppings ...here are a few that we had:
whipped topping (Cool Whip)
brown sugar
butter
maple syrup
fruit syrups (like raspberry or blueberry)
walnuts
m&ms
chocolate chips
peanut butter chips
strawberries
strawberry jam
blueberries
raspberries
cinnamon & sugar
peaches
pie fillings (like apple or cherry)
This way we could mix & match what we wanted to and we made some pretty weird combos, but they all tasted great!

Strawberries and cream are best but you can try mixing some cinnamon sugar or maple sugar in with the batter. Cinnamon pancakes are delicious with hot apple topping.

I like to take pecan pieces and toast them in a good amount of butter until fragrant, add some sliced bananas and real maple syrup and cook until hot and bubbling, then pour it all over whole-grain pancakes. Sugar-rush ambrosia!

my absolute favorite is soft cheese mixed with spinach and forest mushrooms (any other mushrooms would do as well). wrap it into pancakes, place in a baking dish, top with tomato sauce and grated cheese. bake for 20-25 minutes.
