Think of coffee as fresh produce. The enemies of coffee are for example: air, light and moisture. To keep coffee fresh, it should be stored it in an opaque, airtight container at room temperature.
Storing coffee in the refrigerator or freezer for daily use can damage the coffee as warm, moist air condenses to the beans whenever the container is opened.
Long-term storage in the freezer. Yes.
For day-to-day use. No.
It dulls the flavor of the coffee. It will stay perfectly fresh for a week at room temperature if it is kept in an airtight container. You should really only freeze coffee if you're storing it for longer periods of time, and then when you get some out, bring it to room temperature before you brew. No in and out of the freezer because of the condensation.

I wouldn't want to preserve the flavor of INSTANT coffee. I doubt it makes any difference.

My family does this as well and for the same reasons. If you are a coffee drinker you should try Folger's Vanilla Biscotti it's one of the new flavors that recently came out.

It is true. I'm not sure why it works, but it does, and not only for instant coffee.

I am going to guess that cooler temps help slow down oxidation, so I say yes, it helps :)
