Chuck Wagon Salisbury Steak

Ingredients:
2 c Cornflakes
1 Egg
1/2 c Barbecue sauce
1 1/2 ts Salt
1/2 ts Black pepper
1 lb Ground beef

Instructions:
Measure cornflakes,then crush to 1 cup.Place crushed flakes in a mixing bowl.Add egg,1/3 of the barbecue sauce,salt and black pepper;beat until thoroughly combined.Add ground beef; mix well.Shape into 4 oval patties,about 3/4" thick.Place in a shallow baking dish in single layer.Brush patties with the remaining barbecue sauce.Bake @ 375 degrees about 25 minutes for medium doneness.

Salisbury Steak

This recipe is nothing like the school-cafeteria's. Perfect for a hot family dinner :P

4 servings 1 hour 20 min prep

1 lb ground beef
1/3 cup dry breadcrumbs
1/2 small onion, finely chopped
1 large egg, lightly beaten
1 teaspoon worcestershire sauce
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1 tablespoon oil
1 large onion, thinly sliced
1 cup mushrooms, sliced
2 cups beef broth
3 tablespoons cornstarch
3 tablespoons cold water


Mix the beef, bread crumbs, onions, egg, Worcestershire sauce, salt, and pepper with your hands in a medium bowl. Shape into 4 patties, each about 3/4 to 1 inch thick.
Melt the butter with the oil in a large skillet over medium-high heat. Add the patties and fry for 4 to 5 minutes on each side. Use a spatula to transfer the patties from the skillet to an oven-proof plate; keep warm.
Add the sliced onion and mushrooms to the skillet and saute until the mushrooms give up their juice, about 8 minutes. Stir in the broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Heat to boiling, then reduce the heat, cover, and simmer for 10 minutes.
Dissolve the cornstarch in the water in a small bowl. Stir into the mushroom mixture and bring to a boil. Cook, stirring, until thickened.
Pour the mushroom gravy over the patties and serve.

Cut up chicken parts on a big Cookie pan,
wash the meat, dredge it in flour, then soak it in milk, then in cracker crumbs, then bake at 350 for 1 hour and 40 minutes. add a few baked potatoes and add sour cream when ready.
chop up some colly flower and broccoli
boil a pot of water and just about 5 minutes before you sit down toss the mixture into the water for the five minutes then, open a can of cheese soup pour it into a little bowl to microwave it
when the chicken potatoes are in the platter put the veggies in their own bowl add the cheese and just enjoy.
everything is done in 2 hours from start time use tin foil for an easy clean up. drew ling yet, then get started.

Chicken CasseroleThe dumplings on this casserole recipe will turn this easy chicken dish into a crowd pleaser. The easiest way to turn leftovers into a great main dish.Ingredients:
• CASSEROLE:
• 1 cup diced carrots
• 3/4 cup chopped onion
• 1/2 cup chopped celery
• 1/4 cup chicken broth
• 1 can condensed cream of chicken soup
• 1 cup sour cream
• 3 cups cooked, chopped chicken
• 1/2 cup mushrooms
• 1 teaspoon Worcestershire sauce
• 1 teaspoon salt
• 1/8 teaspoon pepper

• TOPPING:
• 1 cup all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 eggs
• 1/2 cup milk
• 1-1/4 cups shredded Cheddar cheese
Method:
Casserole: In saucepan, combine carrots, onion, celery and chicken broth. Simmer 20 minutes. In 3-quart casserole dish, mix soup, sour cream, chicken, mushrooms, Worcestershire sauce, salt and pepper. Add simmered vegetables and liquid; mix well. Topping: In mixing bowl, combine flour, baking powder and salt. Add eggs, milk and 1 cup of the cheese. Mix just until well blended. Drop tablespoonfuls of the topping onto the casserole and bake in 3500 oven for 40-45 minutes or until golden brown. Sprinkle with remaining cheddar cheese and return to the oven until cheese is melted.

I'm making oven fried chicken with mashed potatoes, milk gravy from the drippings, peas and cranberry sauce.

The chicken is easy. Just melt 1 stick of margarine in an oven proof 9 x 11 pan. Shake the chicken pieces in flour and seasonings. place chicken skin side down in a 350 defree oven for 30 minutes then turn the chicken and bake another 45 minutes. Scrape drippings from the bottom of the pan into a skillet and make gravy.
Yummy!

Lemon Pepper Chicken

Shake lemon pepper (available at the spice isle) over the outside, inside, and under the skin of a baking chicken. Stuff chicken cavity with red onion and half a lemon and close. Stuff slices of butter under and on top of the skin (this seals the skin and holds in the juices better). Place sliced red potatoes and any remaining lemon and red onion around the outside of the chicken. Bake at 350 degrees until the chicken is completely done (use a meat thermometer for best results). Use the broth that comes off the chicken to make gravy. (Heat 3 cups of broth, or broth and water added to make three cups. Add chicken boullion if too weak. Add 3 tablespoons of corn starch mixed with 1/4 cup of water and wisk until thick. Add spices if you wish ).

Serve chicken cut up on a platter, surrounded with potatoes and onions. Garnish both meat and potatoes with gravy.

how about making a meatloaf with mashed or twice baked potatoes?

Simple Meatloaf
1 lb ground beef
2 eggs
1 cup dry Stove Top stuffing mix
1-3 tablespoon milk, just add a little at a time
1/2 cup very finely chopped onions
1/2 cup very finely chopped celery
1/2 cup pizza sauce or ketchup
salt and pepper
3 dashes steak sauce (for flavor)

Preheat oven to 325°F.
Crush or grind dry stuffing into bread crumbs, I used my food processor.
Pour crumbs into a large mixing bowl and add eggs, milk, salt and pepper, steak sauce.
Let stand for about 5 minutes.
Mix in meat, onions and celery.
Mix very well.
Transfer to a good baking pan, I use a small cast iron pot with a lid, pat down and cover with a lid or foil.
Bake for about 30-40 minutes.
Remove lid and top with sauce.
Return to oven and bake uncovered for 15 minutes longer.
I have to turn down the heat at this point so that it doesn't get too crunchy on the edges (225°F is warm enough).
Remove from oven and let stand for 5 minute.
Enjoy.

But I just posted a fantastic Lemon Herb Roast Chicken dish that is very easy as well. Also, you can find a "Florentine" Meatloaf with spinach, roasted tomatoes and parmesean in the meatloaf and a great recipe for Italian Wedding Soup.

Here are 3 that take less than an hour to make. Enjoy!!

Baked Shrimp

1stick butter, melted
4lemons
1ounce ground black pepper
1bottle (16 oz.) Wishbone or Viva Italian Salad Dressing
5pounds raw shrimp, headless, unpeeled
Salt to taste
Hot French Bread

Melt butter. Thinly slice 2 lemons and squeeze juice from the remaining two. Combine all ingredients with shrimp and place in a 3-quart Pyrex or Corning Ware baking dish. Bake, tightly covered, at 375° for 45 minutes. Serve warm unpeeled shrimp with some of the sauce. Use French Bread for dipping in sauce. These are messy, but sooo good!! I usually serve with baked potato & green salad. Serves 5-6.

Dad’s Potato Soup

5 pounds potatoes, peeled and diced
1 to 2 medium onions, diced
1 stick butter
8 ounces milk
1 quart Half & Half
Salt & Pepper to taste
¼ cup parsley, chopped
Cheddar cheese, grated

Boil potatoes in salted water until done. Drain water. In a skillet, saute’ onions in butter. Add onion mixture to potatoes. Add milk, Half & Half, salt and pepper. Cook on medium heat until it thickens slightly. Add more milk to suit preference. Add parsley, simmering on low heat for a few minutes. Serve topped with cheese and/or bacon bits.

Chicken Crescent Roll Casserole

1 roll crescent rolls
3 chicken breasts, (seasoned, cooked and chopped)
Grated cheese, your choice
1 can cream of mushroom soup (may substitute cream of chicken or cream of celery)
¾ cup milk

Roll crescent rolls flat. Put a little chicken and cheese on each crescent and roll up. Coat baking dish with butter or non-stick spray. Place rolls in baking dish. Brush tops with melted butter. Mix soup and milk together and pour over rolls. Bake at 350° for 30 minutes or until brown.

Pork Chops dipped in egg then in crushed up cornflakes and baked at 350 for about a half hour. YUMMY.

Steak cut in pieces, marinated in whatever, wrapped in bacon held in place with a toothpick, then grilled or maybe even baked?

Some type of hot dish like Tator Tot or Chicken Wildrice...?
