Thanks for all the answers - they were ALL very helpful (I can't choose the best answer!) I made the cupcakes, didn't grease the liners OR the tin and they came out just fine. I guess it helped that the batter I used was very watery so I didn't have the prob of having the liners move around so much when putting the batter in...

Cupcake liners don't really need greasing. As a general rule, if you ARE greasing bakeware, then use the same fat you have used in the mixture, so if you used margarine, then grease the pan with that. If you used butter, then use that. This prevents sticking completely.

If you are making them from scratch try different recipes. Look at the ratio of sugar, butter, flour and eggs and see if that makes a difference. You also might be having trouble with your oven temperature. Different pans can also affect the rising of the cake. A cast iron muffin tin has a different heat conductivity than aluminum, Teflon or steel. The actual shape of the muffin pans vary as well. So there are a lot of variables that go into the perfect cupcake. Betty Crocker also has a 1-800 # and they might be able to help you. The Joy of Cooking Cookbook also has a section about how to get a muffin to rise correctly. I always practice a recipe several times. I bet you might discover it is the pans or the oven not heating right. It's only a guess.

no there is no need to grease the inside of the muffin or cupcake liner if you wish to grease the muffin tin the use something like pam

I put the cupcake liners in the muffin tin and I don't grease them. They always come out alright.

If you use cupcake liners, then you don't need to grease anything. If you don't use cupcake liners, spray the muffin tin with Pam, or do it the hard way by hand with butter.

If you're using paper baking cups in the muffin tin, no grease is needed at all. When the cupcakes/muffins are done, and cooled to where they can be eaten, everybody just peels off the paper and digs in!

NO, never grease the cupcake liners, there is no need, also if using liners do not grease the tin.

no you dont grease the inside of the paper liners. if your not useing paper liners grease the inside of the muffin tin with butter

I have used cooking spray in the bottoms of muffin tin liners as I have had the muffins stick. I would rather use the liners without spraying, but it seems to help. Haven't had any fires...yet!
